Regarding the production of ice hand brewing, Front Street has shared many different brewing methods. But for those who are just getting started, it is still difficult to master most of the punching methods.

图片

Because most ice brewing requires the use of ice cubes to achieve a rapid cooling effect, and we need to reduce the amount of water to produce high-concentration coffee to offset the dilution caused by melting ice cubes, so this has more stringent requirements for the control of parameters and water flow. It is naturally more challenging for novices to make a good bottle of ice brewing.
without! have! close! Tie! Today Front Street is going to share a brewing method that does not require strict control of parameters or water flow to produce a delicious ice brew. It is very, very simple!
图片
How simple is it? You can almost ignore the water temperature and the grinding degree of the coffee powder. We directly use the finest grinding and boiling hot water to make it, and there is no need to control the water, so you can easily make a delicious cold pot of hand brew. The only difference from conventional brewing is that we need to add an action during the brewing process - stirring.

That's right! The brewing method that Front Street wants to share today is that of our Taiwanese baristas.AmisMy favorite mixing method is one that I believe friends who have been following Front Street for a long time are already very familiar with!
The so-called stirring method is a brewing method that adds manual stirring during the brewing process. During the process of brewing coffee, we will need to control the kettle to continuously circle, so that the injected water flow can stir up the coffee powder and increase the dissolution speed of flavor substances. Compared with water column stirring, the potential energy brought by manual stirring will be more powerful, which can dissolve the flavor substances in the coffee more quickly. The taste of the coffee can therefore be fuller, which is very suitable for friends who usually cannot brew the taste of iced coffee.

When many friends see this, they may think: the finest coffee powder, the highest water temperature, and more powerful stirring, wouldn’t such an extreme combination easily lead to overextraction of the coffee?
really! Such a "combination punch" seems to make it easy to over-extract the coffee, but in fact it is not that easy. Because ice brewing uses less water, it is not easy to over-extract coffee under normal pressure. The extraction time and water injection method of the stirring method are gentler than conventional brewing, so we do not need to worry about over-extraction.

Okay, without further ado, Front Street will share how to use the stirring method to brew a pot of delicious and rich iced Pour over(V60) coffee!

Brew and share
Because Front Street wanted to drink a cup of iced coffee that was sour, sweet, and very juicy, the coffee beans used this time were Front Street Kenya·Small Tomato from the Front Street bean list. This is a medium-light roasted coffee bean with a very rich flavor.Taste of Kenya~The extraction parameters are as follows:
Amount of powder used: 15g
Pink to water ratio: 1:10
Grinding degree: Ek43's 0 scale / grinding machine's finest scale
Brewing water temperature: 100°C
Ice cubes used: 100g
Use filter cup: V60
Brewing method: Stirring method
When using the stirring method, remember to prepare a handy stirring tool, such as chopsticks, spoons, etc. that are always available at home. Then when we are ready, we can start brewing!
First, we inject three times the amount of water into the powder(45ml)Steam for 30 seconds. The reason why we need to use three times the amount of water as the coffee powder this time is because we need to stir during the steaming process so that the hot water can fully contact the coffee powder, so as to achieve more complete exhaustion. Stir until the coffee powder and water are all in contact(Stir it back and forth). When the stirring is finished, we wait for the steaming time to end before starting to inject the next section of hot water.

图片

After steaming, we directly pour in all the remaining hot water in one go(105ml), then take out the stirring tool and start stirring the moment you finish filling the water. The stirring time is 20 seconds. After stirring, we only need to wait for the coffee liquid in the filter cup to filter out, then we can remove the filter cup and end the extraction~

The total time is 1 minute and 45 seconds, and as the front street said, the Kenyan ice hand brewed in this way tastes very sweet, and its aroma will be much richer. You can clearly taste the flavors of ebony plum, cherry tomato, and caramel. The taste is thick, just like drinking a glass of sweet and sour tomato juice.
However, it should be noted that this brewing method is more suitable for lightly roasted coffee. If the brewed coffee is darker roasted, it is best to lower the water temperature appropriately or adjust the coarse grinding, otherwise there is a risk of over-extraction.
