Colombia is the second largest producer of Arabica coffee beans in the world after Brazil. Everyone is familiar with the chocolatey taste of Colombian coffee beans. As we all know, coffee originated in Ethiopia. If no one brought coffee seeds or coffee saplings to Colombia, how could there be Colombian coffee today? However, there are a lot of discussions about the origin of the history of coffee cultivation in Colombia. One theory is that coffee may have been introduced by Jesuit monks in 1723, and then gradually spread to various regions in the country and became a cash crop.
It was not until the 19th century that Colombian coffee became commercialized, and it occupied a pivotal position by the end of the 19th century. Coffee became one of the main sources of revenue for the Colombian government. By the early 20th century, Colombia had established a logistics system that enabled small coffee farmers in remote areas to export their coffee beans more efficiently. Therefore, Colombia's coffee beans exported by small farmers accounted for about 50% of the total export volume.
If you go to the supermarket to look for Colombian coffee beans, there is a high chance that you will see "MAM" logo. Some friends may think that "MAM" is a production area. Front Street needs to educate everyone here. Strictly speaking, "MAM" is composed of three major production areas, namelyMedellin(Medellin), Armenia,Manizare(Manizales). These three major producing areas are the most well-known commercial coffee bean producing areas.

The specialty coffee bean producing areas in Colombia are generally in the south. Next, let Front Street introduce these production areas to you one by one:

 【Antioquia】
The Antioquia production area is the place where Colombian coffee first took root. Most of the areas here are high in altitude, near the high mountains of the Andes. It is an important coffee production area in Colombia.

 【Boyaca】
Boyaca is one of the first regions in Colombia to grow coffee. Today, there are more than 10,000 small-scale coffee farmers in the Boyaca production area, and each coffee farmer carefully processes the carefully selected coffee cherries in the processing station managed by them. This production area has a long history of cooperation with FNC.

 【KaukaCauca】
The Cauca production area is adjacent to Tolima and Huilan. It is a certified production area of Colombian coffee origin. The average altitude here is about 1,700 meters, and 80% of the terrain is mountainous. There are two major volcanoes nearby, Sotara and Petacas, which provide fertile volcanic soil for coffee cultivation in the Cauca production area.

【Huila】
The Huilan production area is the most famous specialty coffee production area in Colombia. It is located on the side of the Andes Mountains, close to the Nevado del Huila volcano, the second highest peak in Colombia. The fertile soil, lush forests and humid climate here are very suitable for cultivating coffee. Many important rivers in Colombia meet the Huilan production area, bringing abundant water resources and moisture to the place.

 【Na LinglongNarino】
The Nalinglon production area is the first coffee production area to obtain Colombian coffee origin certification. The Nalinglon production area has steep terrain and active volcanoes. The Galeras volcano has brought a lot of fertile volcanic soil to Nalinglon.

 【Santander】
The Santander production area is a famous specialty coffee production area in northern Colombia. The altitude here is low and the temperature is relatively high, which makes the coffee in the Santander production area stronger and more rounded in taste. As of 2020, there are 32,000 coffee growers and 37,000 coffee farms in the Santander production area. After cupping coffee beans from the Santander production area, Front Street found that the coffee beans from the Santander production area have a strong flavor, a long aftertaste, and a unique fresh herbal flavor.

 【Tolima】
Tolima is the third largest coffee producing area in Colombia, producing 12% of Colombia's coffee beans. The Tolima production area is completely surrounded by the Andes Mountains and the Magdalena River Basin, creating a remote environment.

Friends who pay attention to the Front Street ration bean series can find that the Front Street ration bean series is composed of various iconic production areas. Among them, there is Colombian Whelan coffee beans.

The Huilan production area is the largest specialty coffee production area in Colombia. It is not only the largest coffee production area in Colombia, but the quality of its coffee is also amazing. In 2013, the Huilan production area became a Colombian coffee origin certified production area.
I walked into the front street store and asked the barista, if there was one production area to represent Colombia, which production area would it be? Baristas on Front Street will all answer the Whelan production area. Colombian Huilan coffee is characterized by slight fruit acidity, rich nutty chocolate flavor, and balanced flavor.
Everyone says that good ingredients often only require the simplest cooking method. The same goes for coffee. Coffee beans treated with water washing can show the most basic flavor of the production area and the cleanest and brightest taste; while sun-dried coffee beans have a richer aroma, more obvious sweetness, and a thicker taste.

African coffee beans are mostly roasted lightly to highlight the acidity, Asian coffee beans are mostly roasted darkly to highlight the body, and American coffee beans are mostly roasted medium to highlight its aroma. The roasters at Front Street consider the need to highlight the nutty, chocolate and other tones of Colombian Whelan coffee and enhance the sweetness such as caramel, so they adopt a medium roasting method.

When the baristas of Front Street Coffee brew this Colombian Whelan coffee bean, they use 90 degrees Celsius hot water to extract the aroma as much as possible based on the basic flavor and roasting degree of the coffee bean. However, in order to avoid the bitter taste caused by over-extraction due to too high water temperature, a Hario V60 filter cup with a relatively fast flow rate is used. At the same time, in order to give the final product a richer layered feel, Front Street suggested using a three-stage water injection method.
 Filter bowl: Hario V60
Water temperature: 90 degrees Celsius
Amount of powder: 15g
Pink to water ratio: 1:15
Grinding degree: No. 20 screen pass rate 80%

First inject 30 grams of water and steam for 30 seconds. Inject the second section of water to 125 grams with a slow circular flow. When the water level in the filter cup drops to 1/2, continue to inject the third section of water to 225 grams. Finally, wait until the water is completely filtered and pick up the container below to remove the filter cup. The total extraction time is about 2 minutes.
