Panama La Esmeralda Diamond Mountain
Introduction to coffee cultivation in Jade Manor
Emerald Manor is located in the suburbs of Poquet in southwest Panama. It was originally built as a comprehensive farm. Planting coffee is only part of the farm's overall economic source. Other projects include raising dairy cows and growing citrus. When it comes to Emerald Manor, what attracts special attention is the owner of the farm - Petersen (Peterson) family accidentally discovered a coffee variety with great potential: GEISHA. After careful cultivation and planting, this variety has won a series of championships in coffee competitions for several consecutive years since 2004. So far, Jade Manor has established itself as the king of the world's coffee market.

2002 was a turning point for Emerald Manor. The reason came from Mr. Peterson's youngest son, Daniel Peterson, who believed that the coffee cultivation in the entire Emerald Manor was divided into two major areas - the original Emerald Manor in the southwest of Boquete and the newly incorporated one in 1996.JaramilloThe coffee produced in the two areas of Jaramillo Farm has always been harvested and sold as a blend. Although the overall quality evaluation is good, the extremely elegant citrus fruit aroma and sweetness should come from the flavor of some of the excellent coffee beans on the farm. So he began to conduct cup evaluations on each planting area in the park one by one. Finally, he discovered the coffee harvested from these tall and thin coffee trees with low fruiting volume in several valleys with higher altitudes in the Jaramillo Park. The cupping taste was excellent. After several inquiries, he found out that these varieties that like to grow at high altitudes and low temperatures are the later famous GEISHA~
In 2004, Emerald Manor participated in the Best of Panama-BOP cupping competition with these special coffees. Geisha's unique aroma and saturated taste amazed the judges. It also won the title of "Best Coffee in Panama" and set a historical record of USD. $21 dollars a pound (price per pound) at the auction that year! This competition has brought Jade Manor’s Geisha Coffee to the attention of the specialty coffee industry! Won in 2005, 2006, 2007, 2009 and 2010BOPLaurel~

Emerald Manor’s other award-winning records:

The relationship between Emerald Manor and Diamond Head
From winning the championship in consecutive years in 2004 to the start of independent bidding and auctions in 2008, jadeite has set countless sky-high price records, and the concepts of "red label" and "green label" have long been deeply rooted in the hearts of the people. In recent years, in addition to creating top-notch products that shine brightly, the manor has also launched some accessible styles, one of which is the Diamond Mountain series of products introduced by Front Street.
Front Street Diamond Mountain series is planted in the Poquet production area on the right side of Mount Baru.Canas Verdes On the suburban slopes of Jaramillo and Jaramillo, the altitude is about 1400-1600M. The coffee grown in this area is mainly Typica, Bourbon and Catuai. The volcanic soil in this area is an excellent place to grow coffee, and the virgin forest also provides enough shade for the coffee trees. Such unique conditions allow the green coffee beans produced to have rich and complex fruit aromas, chocolate, and fresh spice flavors.

In addition to producing high-quality green coffee beans, Emerald Manor Diamond Hill also continuously pursues and practices renewable operations. The entire park is certified by the Rainforest Alliance to ensure that the habitats of birds and wildlife will not be affected by man-made damage. Wastewater is also recycled and reused when processing green beans. The quality of the water source is clean and safe, forming a self-sufficient coffee manor ecosystem.

Products of the famous Jade Manor - Diamond Hill
geographical environment: Diamond Mountain is another star brand of Emerald Manor. The main varieties are Carduai. This coffee beans are picked from Jaramillo and Canas, one of the four independent farms of Emerald Manor. Verdes, the volcanic soil owned by these two independent farms is an excellent condition for growing coffee, and the virgin forest also provides enough shade for the coffee trees. Due to such unique conditions, the green coffee beans produced have rich fruit aroma and sweetness. In addition to Geisha, Emerald Manor is an equally popular independent brand.
We know that the taste of coffee is largely determined by the variety. The exquisite flavor of Geisha coffee is what makes this variety so popular. The variety of Diamond Mountain is Kaduai, which is popular in many Central and South American countries.

So the Kaduai variety combines the best of both worlds, with high yield, disease resistance, clean and bright color. At the same time, compared with Bourbon varieties, Carduai has a very high yield. One of the reasons is that the plants are small, which can shorten the distance between plants. The planting density of Carduai is almost twice that of Bourbon.

In addition to its superior growing environment and high-yielding varieties, the quality of Front Street Diamond Hill coffee is also related to the mature processing technology of Emerald Manor. At Jade Manor, workers will rinse the harvested ripe coffee fruits and send them directly to the courtyard, and then evenly spread them out to dry. Just like the characteristics of sun-dried coffee, because the pulp is retained and dried together, the coffee beans absorb the sugar and develop more fruit and fermentation aromas.

Guardiola is a drying method often used at Emerald Estate, allowing Guardiola to process large quantities of coffee at the same time, as long as the size of the coffee cherries allows. A guardiola is a horizontally rotating drum that allows warm air to flow around the beans, removing moisture and reducing the chance of mold. After the coffee beans are dried, they are put into nylon bags and will be kept in the warehouse for 30 to 45 days. This step, also known as “reposo,” helps stabilize the beans and enhances the flavor in the cup.

Front Street observed that the color of sun-dried diamond mountain green beans is yellowish, and there will be more silver skin on the surface of sun-dried green beans. The body of Kaduai beans is flat and the tail end is relatively slender. In order to retain more of the red berry aroma in the coffee beans, the Front Street roaster adopted a medium-light roasting level to present this Diamond Mountain.
