Knowledge for Beginners to Brewing Coffee|What are the six common mistakes that beginners should avoid when brewing coffee? How to brew Pour over(V60) black coffee correctly?

No one wants to ruin their coffee, especially expensive specialty coffee beans. No one wants to drink a bad cup of coffee, but if you make one of these common mistakes, no matter what you use, you will not only waste a pot of coffee, but if you are not aware of the problem, you will make it again. Are your coffee beans fresh and premium?

This is a problem that is easily "dark under the light". Even many professional baristas forget to pay attention to the date of the coffee beans when brewing coffee. If you can't guarantee that what you use is freshcoffee beans, then it won’t be surprising if the coffee you brew tastes bad.

Are you using the correct water?

On the one hand, water temperature affects coffee extraction. If the water temperature is too high, the bitterness and astringency will be easily washed out; if the water temperature is too low, the coffee flavor will be weak and the acidity will be unbalanced.

However, the normal brewing water temperature range is between 85 and 95°C. Generally, the brewing water temperature depends on the degree of roasting and freshness of the beans. Also pay attentionHand-brewed coffee ratio。

My personal suggestion is to divide the beans into five levels: extremely deep - medium deep - medium - shallow - very shallow, corresponding to 85~87~90~92~95℃ respectively; when the exhaust is strong, the steaming time is extended, and when the exhaust is not strong, lower the water temperature by 1~2℃.

On the other hand, the amount of mineral components in the water will affect the taste and aroma of the coffee, and even the smoothness of the taste. What kind of water is suitable or not requires detailed analysis of the specific situation. Anyway, the consensus in the industry is that the water quality for brewing coffee needs to be moderate, not too soft (TDS is too low) or too hard (TDS is too high).

Do you clean your brewing equipment regularly?

We all want to be lazy sometimes, especially when we find that sometimes skipping a cleaning or two will not significantly affect the quality of the coffee. But because you never know when, you will drink a cup of coffee full of burnt, oily, and rancid smells, which will definitely become a nightmare for coffee lovers.

More importantly, if complex appliances such as coffee machines and grinders that contain moisture and oil are not cleaned for a long time, they will easily become rotten and breed bacteria, endangering human health. At that time, no matter what high-end specialty coffee beans you use, drinking it will inevitably upset your stomach.

Are you using bad coffee?

There are so many beans on the market. Of course, this does not mean that high-quality beans will taste good.specialty coffeeThe level must not taste good. But when drinking specialty coffee beans, the overall quality experience is always relatively high, and the chance of making mistakes is much smaller. Apart from cupping scores, there are only two types of bad coffee that I consider:

We often say “you get what you pay for”, and this is true in most cases. But there are many exceptions in the coffee world, because there is also a saying that "you get what you pay for, two cents for three cents, and three cents for ten cents". Therefore, for some specialty coffee beans, the difference in cupping score is only one point, but the price can differ several times.

Are your coffee beans stored correctly?

Coffee beans are also a type of fresh agricultural products, and of course they are not just available. Generally speaking, we don’t need to think too much about how to store coffee beans, because they are usually in coffee bags or coffee cans, and there is no need to deliberately change the storage container. We just need to put it in a cabinet or corner. However, it is best not to store coffee beans for a long time in some places: humid kitchens, next to heating appliances such as ovens and microwaves, and windows exposed to direct sunlight. Oxygen, moisture, high temperatures, and sunlight will all accelerate the oxidation and deterioration of coffee beans.

You can now buy the above coffee beans online at the Taobao store “FrontStreet Coffee” (前街咖啡).
