The darker the coffee is roasted, the more acids in the coffee are destroyed and replaced with more caramel, smoky, and bitter flavors. Based on their understanding of different coffee beans, roasters use different roasting degrees to give beans of different origins and varieties a unique flavor. For example, it can retain the bright acidic or floral notes of beans, or present a mellow sweetness or coke note. But if you don’t like sourness or bitter taste, what kind of roasted coffee beans should you choose?
The roasting degrees of our common coffee beans on the market can be roughly divided into three categories: light roasting, medium roasting and dark roasting. Coffee that is not too sour and not too bitter basically belongs to medium roasting.

The sourness and bitterness of coffee are actually determined by roasting. There is a term in coffee roasting called "first crack". When the coffee beans absorb heat to a certain extent, they can no longer store energy and release the heat through bursting. In layman's terms, it tells you that the coffee beans are ripe. If it comes out of the oven at this time, the coffee will be very sour; if we don't come out of the oven after the "first crack", we will continue to roast it, and wait until the "crackling" sound is intense before coming out of the oven. The coffee at this time will be sour and sweet, which is what we call medium roasting.
Medium roast coffee can generally be divided into two types: medium light roast and medium dark roast. We can directly judge it from the coffee flavor.
