Americano coffee may have become the mainstream in cafes, especially in summer, have a cupIce AmericanIt must feel really good. Coffee has become a habit for many people to drink a cup of coffee every day. Sometimes it is to enjoy the slow time of life, and sometimes it is to add spiritual strength to the tiring life of day and night. No matter what the reason for drinking coffee is, the fact is that many people have regarded coffee as their daily essential "coffee ration".
However, coffee is a crop, and there are times when brewing coffee is unstable. Although sometimes we can accept a less than perfect cup of coffee based on subjective feelings, we cannot deny that if most people can understand more coffee knowledge or brewing skills, then this cup of coffee can taste better.
AmericanoIt feels bitter to people. If you drink something sour,Americano, you will definitely ask: Is this normal? Or is this a good cup of Americano coffee? In fact, it is normal for Americano coffee to be sour, because the coffee beans themselves are rich in sourness, but as the roasting time increases, the acidity will gradually weaken. Most of the Americano coffee we drink daily uses dark roasted coffee beans, but there are also coffee beans that can still exhibit sourness even when roasted darkly. However, now more and more American coffees are gradually losing their bitter taste and turning towards coffee with sour taste. Nowadays, the taste trend of people drinking coffee has shifted from the traditional burnt and bitter coffee flavor to floral and fruity acid flavor types, or to single-flavor SOE coffee.

When coffee is brewed, bitter, sweet, and sour substances dissolve at different speeds. At the beginning of brewing, sour substances are most easily extracted, followed by sweet substances, and finally bitter substances are gradually extracted. If a cup of coffee is very sour, it may be that the extraction of sweetness and bitterness is over before it begins, and it is possible that the cup of coffee is under-extracted. If a cup of coffee is very bitter, it may be that the brewing process is continued for a long time and the bitterness is over-extracted. It could also be that the coffee is over-extracted.
If the Americano is too acidic, how should I adjust it?
The taste of coffee is affected by the entire coffee processing process, starting from picking and processing the green beans, to coffee roasting, and ending with brewing a cup of coffee. Some coffee has a sour aroma in its flavor, so it cannot be said that all the acid in coffee has a bad flavor. Just like an apple, it tastes sweet overall, but it also has a little sourness. This acid makes the sweet and sour taste of the apple better. "Bad sour" usually refers to an overly pungent acetic acid smell.
Roast degree: It’s just that we usually use dark roasted coffee beans to make Americano, so the taste is not so sour. If it is sour, it may be that the roasting degree of the coffee beans has become lighter, so we need to use darker roasted coffee beans to try brewing. For example, Brazilian coffee beans, Colombian coffee beans, etc.

Water temperature decreases: Appropriately lower the water temperature, extend the extraction time, and keep the coffee powder as still as possible in the water, which can also soften the acidity of the coffee.

Grind fine: If the grinding degree of coffee is too coarse, it will be very sour. We can adjust the grinding degree to increase the extraction rate. In this way, the coffee will be less acidic and the bitterness will be enhanced.

Increase water injection volume: Brewing can be adjusted by increasing the amount of water filled. For example, the original powder-to-water ratio is 1:15, which can be adjusted to 1:16 or 1:17.
Extend total extraction time: When the total extraction time is too short, there will be relatively more acid and less bitterness extracted. Therefore, when the total extraction time is extended, more sweetness and bitterness will theoretically be extracted. Generally speaking, for 15g of powder, the extraction time should not exceed 2 minutes and 15 seconds even if it is extended.

If the reasons on the beans are excluded, it may be caused by the channel effect. The channel effect causes the coffee to be partially over-extracted and partially under-extracted. The coffee in your mouth will be bitter and sour. If you want to avoid the channel effect, you can use a powder distributor to distribute powder evenly. At that time, the channel effect is bound to exist. It is just the difference between more and less. All we can do is to reduce it as much as possible.
SOE Americano
SOE Americano coffee is now popular in cafes, and SOE Americano coffee fully expresses the sour taste of Americano coffee. Soe means "single-origin espresso", which is espresso extracted from single-origin coffee beans. The meaning is to express the flavor of single-origin coffee. Therefore, we will choose some coffee beans with flavor characteristics, such as coffee beans with strong flavor expression such as Yirgacheffe, and rarely use Brazil, Blue Mountain, and Mandheling as soe, because these types of coffee beans cannot be different from traditional Italian blended beans. In terms of roasting, these soes will be roasted slightly lighter, but slightly darker than hand brewing, highlighting the original flavor of the coffee beans. So usesoe coffee beansThe American coffee produced will have an obvious sour taste. For example, Ethiopian SOE American coffee will be very sour.

The Americano coffee produced at FrontStreet Coffee stores uses a blend of 30% Yirgacheffe coffee beans and 70% Sherry coffee beans. Although Yirgacheffe coffee beans account for a small proportion in the entire blend, the sourness of Yirgacheffe coffee beans will be amplified during the supercharged concentrated extraction, adding a lively berry sourness and sweetness to the espresso.
Americano is espresso diluted with water. The diluted berry sweetness turns into the bright acidity of citrus fruits. If it is a hot Americano, it will taste more sour after the coffee is cooled and the aroma dissipates and the temperature decreases. This is why FrontStreet Coffee often reminds everyone to drink coffee while it’s hot.

Front Street Brewing Coffee Suggestions:
Whether it is Americano or Pour over(V60) coffee, to brew a cup of delicious coffee, you still need to pay attention to the freshness of the coffee beans. Front Street has always believed that the freshness of coffee beans has a great relationship with the flavor of coffee. Therefore, the coffee beans shipped by Front Street Coffee are all roasted within 5 days. The purpose of Front Street Roasting is "freshly roasted and good coffee", so that every customer who orders receives the freshest coffee. The bean-growing period of coffee is about 4-7 days, so the flavor is at its best when customers get it.

For those who need to grind the coffee beans, Front Street would like to remind you that if the coffee beans are ground in advance, there is no need to raise the beans. Because during the transportation process, the pressure generated by the carbon dioxide in the packaging can also make the coffee flavor mellower, so you can make a cup of coffee immediately after receiving the coffee powder. But the coffee powder needs to be brewed in time, because the coffee powder oxidizes quickly when exposed to air, which means that the flavor of the coffee will dissipate relatively quickly, and the flavor of the coffee will not be so good. Therefore, Front Street recommends buying whole beans and grinding them freshly, so that you can better taste the flavor of the coffee.
