If you want to drink cold brew coffee but don’t want to go out to buy it, then FrontStreet Coffee is here to teach you how to make cold brew coffee at home.

Cold brew coffee is a very easy way to master. FrontStreet Coffee's cold brew coffee is based on 50 grams of coffee powder. In terms of grinding selection, because the temperature of the water in contact with the coffee powder is lower than that of ordinary Pour over(V60) coffee, a slightly finer scale is selected than Pour over(V60) coffee, that is, the No. 20 standard sieve pass rate is 85%. Put the coffee powder into a glass bottle, then add 400 ml of room temperature water and 200 grams of hard ice cubes (a total of 600 grams of ice-water mixture) into the bottle. The ratio of powder to water is 1:12. Then use a stirring stick to stir the coffee powder and water evenly, seal it and place it in the refrigerator to refrigerate.

After placing it in the refrigerator for 12 to 24 hours, use filter paper to filter out the coffee grounds to obtain clean coffee liquid. Then use a clean sealed bottle to put the coffee liquid in and refrigerate it for about 4 hours before drinking.

Here, FrontStreet Coffee needs to tell everyone that cold brew coffee does not taste better the longer it is brewed. Whether it tastes good or not is a very subjective matter. Some people like fresh and clean coffee, while others like strong, fermented coffee. These all vary from person to person.

For those who like a stronger fermentation feeling, FrontStreet Coffee recommends that the extraction time can be slightly longer. As the time is extended, the fermentation feeling of the coffee liquid will become heavier, but the concentration of the coffee will be richer and the taste will be more complex. If you feel that the coffee liquid is too strong when drinking, you can add two ice cubes. As the ice cubes melt, the concentration of the coffee liquid will also decrease.

Although there is already a coffee machine on the market that can speed up the material release of coffee in a low-temperature environment through supercharging, and can only produce delicious cold brew in 2-3 hours, the price is really expensive. Warm water (that is, water that is not cold, but not too hot) can have a certain amount of heat that increases the movement of molecules. When the thermal motion of molecules competes with the attraction between solid molecules, the solid molecules will spread apart. At the same time, the thermal motion of molecules increases the number of contacts between water molecules and solid molecules (coffee particles), so when the coffee is ground finer, the solid molecules will dissolve faster & more.

The release pattern of coffee substances is as follows: sour-sweet-bitter. After pouring the coffee powder into the 40-degree warm water and stirring it evenly, the temperature of the warm water will gradually drop. This can prevent the coffee particles from clumping together through the molecular thermal movement, making the subsequent coffee extraction more uniform;

It can also extract part of the sweet and sour substances more quickly, which can reduce the subsequent low-temperature soaking time. Subsequent extraction is carried out in a low-temperature environment for another 3-4 hours in order to allow the sweet and sour substances to be more fully released and to inhibit the precipitation of bitter substances.

Here are the steps to make cold brew coffee with warm water:

This time Front Street uses sun-dried coffee beans from Ethiopia’s Yirgacheffe Red Cherry Project. The biggest feature of Red Cherry Project coffee beans is: sweet! The sweetness is really great! Because the fully ripe coffee fruits are picked 100% by hand and then sun-dried, the sugar in the coffee pulp can be further absorbed by the coffee beans.

30g of sun-dried red cherry coffee beans are ground to medium fine grinding (73% filtered through China No. 20 mesh). For approximate thickness, please refer to the picture below.

Then add it to a clean, sealable, high-temperature and low-temperature-resistant container, then pour 390g of 40°C warm water (powder to water ratio 1:13, if you want it thicker, try 1:12), then stir for half a minute and soak. (No need to cover)

After the temperature of the coffee liquid in the container drops to 35°C (the room temperature of FrontStreet Coffee was 26°C during production, and it was soaked for 16 minutes after it dropped to the expected temperature), it can be sealed and placed in the refrigerator for extraction.

After 4-5 hours, take it out and use a filter tool to filter out the coffee grounds and taste it. If you feel that the concentration is still a bit high, you can add a small amount of ice cubes/cold water to dilute it.

Warm water+What does low-temperature extraction taste like?

Under the same parameters, using room temperature water + low temperature extraction for about 12 hours, the taste will be: bright citrus sourness, sweetness and tea feeling will be more obvious, it feels like sugar-free lemon tea.

After warm water + low temperature extraction for 4-5 hours, the taste is as follows: full berry juice, the sweetness of caramel is very prominent, and the aftertaste has the sweetness of black tea. The sweetness is really good! ! !

However, it should be noted that cold brew made with warm water will release more flavor substances than normal temperature water, so it should not be stored for too long. If you also make it this way, Front Street recommends keeping it sealed in the refrigerator and drinking it within 4 days.
