The transformation of a bean from light roasting to dark roasting only takes a few minutes to complete. The temperature difference is only about 10°C, but there is an earth-shaking change in taste and aroma.

Light roasting means beans that are baked from the middle of first crack to just after first crack! At this time, because the organic acids in the beans have not been completely decomposed, we can feel the obvious sourness in the coffee, with less bitterness and a very complex and rich aroma. Take Yirgacheffe Red Cherry as an example. Lightly roasted red cherries will exude the acidity of berries and lemons, as well as the aroma of strawberries and wine.

Dark roasting refers to beans that are baked after the second crack begins. Because these beans undergo a large amount of caramelization reaction, the flavor is mainly bitter and will have an obvious sweet aftertaste. The aroma exuded by the coffee is single, not as rich and complex as before.

Medium roast refers to coffee beans that are baked after the first crack is completed and before the second crack begins. Because these coffee beans undergo more caramelization reactions, the proportion of sourness in the entire cup of coffee will be reduced. Compared with light roasted coffee beans, the acidity will be less prominent, but the sweetness will be higher. At the same time, the complexity of the aroma increases slightly, which makes the other flavors stand out even more! Therefore, medium roast is also a popular one.
