Some people believe that oil is an indispensable part of coffee flavor, but they also express concerns about the health risks brought by these coffee oils. Today, Front Street will share with you what the oils in Italian coffee are and whether they have any impact on our health.

After all"Fatty coffee beans"Is it good or bad?" Should I buy coffee beans that appear to be "oil-producing" or "not oil-producing"? This time, starting from coffee beans, we will discuss with you how the roasting and extraction processes affect these oils, so as to understand the good and bad of these coffee oils.
●Coffee oil that is not fat
Coffee beans, like other seeds such as corn, soybeans, etc., contain oil. However, the oil on the surface of coffee beans is not the same as the oil on espresso. The oil on the surface of coffee beans is a water-soluble organic substance that looks like grease; and "coffee oil" itself contains many aromatic components of coffee and can be dissolved in water. Therefore, there will not be a layer of greasy oil floating on the surface of your brewed coffee. If you look carefully, they are actually small foams, which will gradually dissipate in a short period of time.

After the coffee is ground, the aroma and oil begin to evaporate and release, and the flavor of the brewed coffee will gradually decrease with the release. Therefore, Front Street believes that the presence of coffee oil is the easiest way to judge the quality of coffee.
The two most familiar coffees are Arabica and Robusta. Arabica has a low caffeine content (0.8-1.4%) and a fat content of about 10%; Robusta contains 1.7-4% caffeine. Coffee oil content is 60% less than Arabica. Due to its lower caffeine content and higher fat aroma, as well as its pure and varied flavor, Arabica has become the first choice among gourmets. Almost 99% of the bean lists on Front Street belong to this variety.

●Two reasons cause “Fatty coffee beans”
The oil content on the surface of coffee beans is generally affected by the roasting method.
●1. Stale lightly roasted beans
"Light-roasted beans" with lighter roasting temperature and light brown appearance will be dry after roasting and will not produce oil. About six days after being released from the oven, "spotted oil" will begin to appear (spotted oil droplets appear on one side of the coffee bean). Slight "spotted oil" does not mean that it is not fresh, but sometimes it means that the flavor of light-roasted coffee beans is at its peak. Continue to put them aside. After more than two weeks after being released from the oven, a bright oily sheen will gradually appear on the surface of the light-roasted beans. At this time, the flavor of the "light-roasted beans" has begun to decline. You should avoid buying them or drink them as soon as possible.

Another situation is that during the roasting process of coffee beans, due to uneven heating, some areas are excessively dehydrated. On the second to fifth days after being released from the oven, oil will also appear in the form of dots, which is different from the oil on the entire surface of deep-roasted coffee.
Anyway, if the above two conditions occur in light roasted coffee beans, it either means that the roasting is not good, or it means that the date is not fresh, and it is not recommended to buy it.
●2.Fresh dark roasted beans
"Dark roasted beans" that are roasted at a deeper temperature and have a dark brown appearance will appear slightly oily after roasting, and a large amount of "oil" will begin to appear on the surface from the second to the fifth day after being baked. When coffee beans are dark-roasted, oil will appear on the surface due to the high dehydration rate. Therefore, it is normal if oil begins to appear on the surface of dark-roasted beans in the first one or two days of storage. For example, Front Street Colombian Cymbidium is a type of single-origin beans with a relatively deep roasting degree. 2 to 3 days after roasting, the surface of the beans begins to release little bits of oil.

"Dark-roasted beans" with a shiny appearance do not mean they are not fresh. On the contrary, the oily appearance of dark-roasted beans will gradually dry out after three weeks after being released from the oven, and eventually they will turn into odorless dark-roasted beans that are dry and not oily in appearance. Therefore, if you see coffee beans that are dry and not oily in appearance but have a dark brown appearance, please pay special attention to whether the roasting date is marked on them. It is very likely that they are odorless beans that have gone bad.
