There are many ways to brew coffee, including the siphon method like a chemist doing experiments, and simple extraction methods such as the French press. Among them, hand brewing may be the most playable one. Generally, the brewing tutorials on the Internet are for one person, so how to brew for multiple people?
Careful friends can easily find that the amount of powder in most brewing tutorials is generally around one person, that is, most people will choose 15 to 16 grams of powder for brewing. Although the brewing plan for one person can often meet the needs of most usage scenarios, such as drinking for yourself at home, produced in stores, etc., there are also some friends who also like to share the fun of coffee, so today Front Street Coffee uses Rose Valley in Colombia as a demonstration to see how to brew Pour over(V60) coffee for two people.

Coffee bean selection
When cupping the Rose Valley coffee beans from Front Street Coffee, the taste was particularly pleasing. The particles of Kadura are full, and after grinding, its dry aroma is like strawberry caramel biscuits. Even people who cannot detect strawberries can smell the obvious sweet aroma. After adding water, the wet aroma of fruits dominates, just like ripe and sweet fruits.
After breaking the grounds, the temperature can be slightly cooled before sipping the high-temperature part. The cupper atomizes the coffee liquid through the sipping action, allowing each sensory part to better experience the more detailed taste. The high-temperature part of Rose Valley is the acidity of citrus, with strong balance and rich layers. The middle part is dark berries with caramel cocoa, and the remaining aroma at the end is a fermentation similar to fermented fruits.
The medium-temperature part has more of a berry flavor, with a hint of dark chocolate, and the finish is still fermented, with a lingering aftertaste. Dark berries dominate the low-temperature part, and the sweetness is enhanced. Dark chocolate and fermentation coexist, and the finish has a continuous fermentation feeling. The flavor of whiskey is looming, making people think of wine-filled chocolate.
Adjustment of brewing parameters
When it comes to the choice of filter cup, Front Street Coffee still chooses the classic Hario v60 filter cup, but the model size is No. 02 (serves 1 to 4 people), which is larger than the common No. 01 (serves 1 to 2 people) and can accommodate more portions. Secondly, the large pore size of the v60 filter hole can reduce the bitterness caused by clogging of coffee powder.
When Front Street Coffee brews single-serve coffee, it will choose to use 15 grams of powder, and the powder-to-water ratio is 1:15-1:16. If you are brewing coffee for two people, Front Street Coffee will choose to add 10 grams of coffee powder to the amount of coffee powder for a single serving (15 grams), that is, choose to use 25 grams of powder, and the powder to water ratio is also 1:15, that is, inject 375 grams of water.
As the amount of powder increases, the thickness of the powder layer will also increase. When the powder layer becomes thicker, the flow rate will naturally slow down. If we brew according to our normal grinding degree of 15 grams of powder, there will be over-extraction, so we can adjust it appropriately.
So the final brewing plan is as follows:
Filter cup: v60 No. 02 filter cup
Amount of powder: 25g
Pink to water ratio: 1:15
Water temperature: 90℃
Grind: medium grind
Brewing method: segmented water injection.
Use 50 grams of water for steaming (the amount of steaming water is just enough to wet the entire coffee powder bed, which is basically twice the amount of powder). During the steaming, steaming is completed when you see that the air bubbles in the powder bed decrease. The steaming time is about 30 seconds.
In the middle of the small flow of water, add water in a circle until 145 grams of water is cut off. When the water level drops and the powder bed is about to be exposed, increase the water flow slightly and continue to add water in a circle until 270 grams of water is cut off.
When the water level drops and is about to expose the powder bed, use a larger flow of water to directly inject water into the center.375When the water level drops and the powder bed is about to be exposed, remove the filter cup (steaming starts timing) and the extraction time is3minutes or so.
