When you go out on this hot day, how can the handsome boy and beautiful girl in front of the screen be worthy of yourself if she doesn’t have a cold drink in her hand. As a coffee lover, of course that cold drink must be coffee. Here, Front Street wants to ask a question: Do you know that cold brew coffee is divided into cold brew type and ice drip type? Friends who often come to the Front Street store will know that the cold brew coffee produced by the Front Street store is generally only ice-drip coffee.

Ice coffee made from coffee liquid extracted with high-temperature hot water is cooled with ice cubes. If the ratio of powder to water is incorrect, the coffee may taste bland or bitter. On the contrary, coffee extracted with low-temperature water has a milder and sweeter taste, without being too sour or astringent.

FrontStreet Coffee uses a 1:10 ratio of powder to water when making cold brew coffee, taking into account the different tastes of each customer. When drinking, add an appropriate amount of ice cubes to the cup, firstly to keep it warm, and secondly, as the ice cubes melt, the concentration of the coffee will slowly decrease, thus satisfying friends who prefer different concentrations.

cold brew coffee

Cold brew coffee is the cold brew coffee that Starbucks vigorously promoted back then. It is not difficult to understand its meaning through the literal meaning. Cold brew coffee is a coffee liquid extracted by soaking coffee powder in cold water. It has a soft taste, clear acidity, and not obvious bitterness. When different types of coffee beans are used and then made with different parameters, the cold brew coffee will also show a different flavor and tonality. The method of making cold brew coffee is also very simple, and the tools required are not as complicated as ice dripping. It can be said that there are many benefits.

FrontStreet Coffee uses 50 grams of powder as the basis. Regarding the choice of grinding degree, although the water temperature for extraction is much lower than that of Pour over(V60) coffee, it is extracted by immersion for a long time after all, so it chooses a slightly coarser grinding degree than Pour over(V60) coffee. If it is sieved with a Chinese standard No. 20 sieve, the sieving rate is 65%. Put the coffee powder into a glass bottle, and then pour 500 grams of water into the bottle. The ratio of powder to water is 1:10. Then use a stir stick to stir the coffee powder and water evenly, seal it and store it in the refrigerator.

After refrigeration for 12 to 24 hours, use filter paper to filter out the coffee grounds to obtain clean coffee extract. Then use a clean glass bottle to store the filtered coffee liquid and refrigerate it for about 4 hours before drinking.

Previously, the baristas at FrontStreet Coffee used Sidamo Candleman beans to test different extraction times to compare the flavor and taste. It was found that as the coffee powder is soaked in water for a longer time, the flavor of the coffee extract becomes stronger and the concentration becomes richer, so the sour, sweet and bitter feeling becomes more obvious; the shorter the extraction time, the softer the flavor and the thinner the concentration.

It is very realistic that although low-temperature extraction is not easy to extract the impurities and bitterness in the coffee beans, the extraction time is long after all, and the coffee is still cold brew or immersion. The barista of FrontStreet Coffee recommends adjusting the grinding degree to a coarser one. Cold brew coffee does not taste better the longer it is extracted. Whether it tastes good or not is a very subjective matter. Some people prefer light coffee, while others prefer strong flavors. This varies from person to person. If you like strong and fermented coffee, you can adjust the powder-to-water ratio according to your preference and extend the extraction time.

Iced drip coffee

It is said that ice-drip coffee was invented by the Dutch, but it has been widely used by Japan and South Korea. It even has a history of hundreds of years in Japan. Many well-known ice-drip equipment also come from Japan and South Korea. Ice-drip coffee is even sold in every local cafe in Korea. Its English expressions include "Kyoto Coffee" and "Japanese-style slow-drip".

FrontStreet Coffee uses 60 grams of powder as the benchmark. In terms of grinding selection, since the temperature of the water in contact with the coffee powder is much lower than that of ordinary Pour over(V60) coffee, the grinding size used is 85% of the Chinese standard No. 20 sieve. The entire extraction time is 6 to 8 hours. The ratio of powder to water is 1:10 like cold brew coffee.

①First place a piece of circular filter paper at the bottom of the powder cup, wet it with water and make it fit the cup wall.

②Pour the ground coffee powder into the powder cup, smooth the surface, and lightly press the powder layer with a heavy object to make the surface smooth.

③Place a piece of filter paper on the coffee powder layer to avoid uneven extraction due to long-term dripping of water from dripping out a pit in the powder bed.

④Use ice water to evenly wet the entire coffee powder layer to achieve the steaming effect in Pour over(V60) coffee, improving the extraction effect and the consistency of the finished product.

⑤Put a 1:1 mixture of ice and water into the water container, and adjust the drip rate of the throttle valve to 7 drops in 10 seconds.

⑥Pour the prepared coffee liquid into a coffee bottle and seal it in a refrigerator to allow the extract to ferment and merge.

So, what coffee beans are suitable for cold brew coffee? In this summer when everything feels boring, FrontStreet Coffee recommends using Kenyan azalea coffee beans from FrontStreet Coffee to make cold brew coffee. The coffee produced from this Kenyan bean is refreshing, clean and with light acidity.

Country: Kenya
Production area: Thika production area
Altitude: 1550-1750m

Processing method: K72 water washing

The reason why the small tomato coffee beans from Front Street have a bright and clean sour taste is not only because of its light roasting degree, but also because of Kenya’s local red soil rich in phosphoric acid, the K72 processing method, and the variety of coffee beans.

K72 treatment method, also known as Kenyan 72-hour fermentation and washing method. The processing process is to peel the ripe fresh coffee cherries picked on the same day, ferment them in a fermentation tank for 24 hours, introduce clean river water to wash them, and ferment them for another 24 hours. This is repeated three times to achieve a strong fermentation effect of 72 hours.
