For those who have just come into contact with Italian coffee, they may feel confused when faced with a lot of coffee terms, such as Espresso, Ristretto, Lungo, Latte, Flat White, etc. In this issue of Barista Development Diary, let’s share what exactly is Long Black?

Long Black is literally translated as [Long Black], and it is also called [Australian black coffee] in China. As the name suggests, Long Black comes from Australia and is very popular in Australia and New Zealand. Since it is called Australian black coffee, it must be distinguished from Americano (American coffee).

The composition of Long Black is very simple, consisting of Espresso and water. So what’s the difference between Americano, which is both made of Espresso and water? Many people simply think that Americano is water poured into espresso (first pour espresso and then water), and Long Black is pour espresso into water (first pour water and then pour espresso). The difference between the two is the order of "materials". Is it really that simple?

All black coffee, Americano andLong BlackWhich country are they from?

First of all, Americano originated after World War II. The U.S. military in Europe was not used to drinking extremely strong Espresso, so they poured warm water into the coffee to dilute it. Therefore, there is a saying that the pouring order of Americano is to pour coffee first and then pour water. Until now, Americano's method does not pay much attention to the order. It is nothing more than the difference between retaining the oil and dispersing the oil. So since it is not a matter of order, what is the real difference between them.

Long Black originates from Australia. Australians like stronger coffee, and Americano cannot meet their needs. Espresso is also called Short Black in Australia, so Long Black is a slightly diluted espresso that maintains the richness of the oil while reducing the concentration. The cup size of Long Black will be smaller than that of Americano, about 150ml. The water is poured first and then the espresso. This will retain the oil. Since the amount of diluted water is less than that of Americano, the taste and richness will be slightly better.

How to make "Australian black coffee"?

1. First, make 2 shots of espresso. The coffee beans used this time are Sunflower Warm Sun Blend coffee beans from FrontStreet Coffee. The specific information is as follows:

coffee bean name

Sunflower warm sunshine blend

Blending source

Honduran sherry casks, Yirgacheffe sun-dried red cherries

Proportion

6:4

Flavor description

Vanilla, cream, fermented wine aroma, chocolate

The extraction plan adopted is 20 grams of powder to extract 40 grams of coffee liquid.

2. Then prepare a glass or ceramic cup, pour 120ml of hot water (70-80℃) into the cup, and then pour 40ml of espresso. The coffee oil will float on the surface, which is very beautiful and healing.

When you taste the Australian black coffee made in this way in Front Street, you can feel the rich and strong coffee aroma. The cream is dense and the solid sweet and bitter flavor goes hand in hand. As the temperature drops, you can also feel the rich layers presented by the beans.

In contrast, Americano coffee is added with a larger amount of water to alleviate the bitterness of espresso. Take Front Street as an example. The capacity of American-style coffee cups is 250ml, and the ratio of concentrate to water is controlled at 1:5, that is, 40ml of Espresso + 200ml of hot water. In addition, since everyone discovered that adding water will directly disperse the Crema, the visual effect is far less beautiful than the hot coffee with golden foam floating on it. Therefore, when making American style, the details of adding water first and then pouring the coffee liquid are emphasized.
