Hand-brewed coffee|Is turbid coffee liquid a sign of poor coffee quality? Why does the liquid color of Pour over(V60) coffee vary from black to red?

Customers and friends often talk about coffee-related content at the Front Street store, such as the origin of the coffee, the parameters and steps during brewing, or the taste of the coffee, etc. Then occasionally, friends will discuss some relatively niche topics, such as coffee.Soup color。

图片

"Soup color" is a professional term from tea criticism. It refers to the color and visual characteristics of tea soup after brewing. This is one of the criteria for people to judge the quality of tea. So for coffee, can the color of the soup also be used as a criterion for evaluating the quality?

Apparently not. The color of coffee is affected by many factors, such as the extraction method, the filter used, the degree of roasting of the coffee, and the concentration of the coffee. None of these have much to do with the quality of coffee, so the color of coffee soup cannot be the defining criterion for its quality.
But it is inevitable that turbid coffee will always make friends associate it with poor quality. So today Front Street will share how the above factors affect the color of coffee.

deepwithshallow、blackwithred/coffee color
Let’s talk about the color of coffee first! I believe it is not difficult for everyone to find that when using the same parameters to brew different coffees, the colors of the coffees are not the same! For example, some are brownish-red, while others tend to be black.
The main thing that determines the color of coffee is the roasting degree of the coffee. When the coffee is roasted darker, the color is darker; when the coffee is roasted lighter, the color is lighter. The picture below shows the light roasted coffee beans in the bean list used by Front Street Front Street Esai·Oiran(left), and dark roasted coffee beans Front Street Sumatra Golden Mandheling(right)After brewing two pots of hand brew, you can compare them.

In addition, the concentration of coffee also affects the color. When the coffee concentration is higher, the color saturation of the coffee is darker; when the coffee concentration is lower, the color is lighter. We can see a clear difference between espresso and Americano.

The “cleanliness” of coffee
Next is the cleanliness of the coffee(This refers to the visual characteristics of the coffee liquid)! Many friends still have this misunderstanding: when the color of coffee is darker, the coffee will be turbid; and when the color of coffee is lighter, the coffee will be cleaner. But in fact, the cleanliness of coffee is not affected by the depth of color, but by the water solubility of the extracted substances.
For example, Pour over(V60) coffee, when we use filter paper to brew, the final coffee is often translucent and clean, looking very clear. And if we are usingmetal filter, or when brewing with a flannel filter cloth, the coffee obtained will be a little turbid and not so transparent. The reason for the difference between the former and the latter lies in the filtering toolFiltration performance。

In the previous article on non-woven filter paper, Front Street introduced that the filter paper has excellent filtration performance and can filter out most substances other than coffee, such as coffee grounds and grease, so the coffee brewed with it is very clean.
Metal filters, non-woven filter paper and other tools cannot filter some very fine coffee grounds and grease due to their large gaps, so the brewed coffee will become turbid due to the presence of these substances. This is also the reason why espresso coffee, moka pot coffee, French press coffee, etc. are cloudy.

However, this does not mean that these tools are not as good as filter paper. The presence of some fine powder can enhance the mellowness of the coffee, and the oil can give the coffee more aroma. Although coffee brewed from paper filters does not taste as clean as coffee brewed from paper filters, they will have a better body and aroma.(a little bit)。
To sum up, we can know why the color of coffee cannot be used as a criterion for judging coffee quality. It can only reflect the degree of roasting, concentration of coffee, and the performance of the filter tool used. Don’t generalize~
