Latte origin story | Which one tastes better, iced latte or hot latte? What is the correct way to drink latte? Which coffee beans are suitable for making Italian latte?

Among the many Italian coffee choices, if someone asks which type of Italian coffee has the highest milk content, FrontStreet Coffee will definitely answer latte. Latte is divided into iced latte and hot latte. Their methods are slightly different, but the recipes are the same. In this next article, FrontStreet Coffee will explain whether latte tastes better when it is iced or hot, andLatte coffee recipesRight.

The origin of latte coffee

According to FrontStreet Coffee, latte appeared much earlier than espresso. Since the 17th century, Europeans have been mixing coffee and milk, especially Italians. For example, the concept of espresso comes from Italy.

For example, William Dean Howells first used the term "coffee latte" in his 1867 essay "A Journey to Italy." At this point in history, coffee was starting to become a worldwide sensation, but since the espresso machine hadn't been invented yet, brewing methods were still very primitive.

Latte is actually the transliteration of the Italian "Latte", which means milk, so if you order a latte from Italian coffee beans, you may get a glass of milk. So latte actually means milk coffee in Italy. And with the emergence of espresso machines, steam wands became the standard feature of espresso machines. Milk can be easily heated on the coffee machine, and modern latte coffee also took shape. So in the 1980s, a barista from Seattle, Washington, began to use rich milk to "color" it, which was the prototype of latte art.

And because the Italian blended beans used in each coffee shop have different flavors and the models of Italian coffee machines are also different, the proportion of milk and coffee, beans used, extraction parameters, etc. of latte coffee in each shop will be slightly different. But generally, a latte is a coffee drink in which a large amount of milk is mixed with espresso. The flavors of latte made from different coffee beans will also be different, the flavor of latte made from different milk will also be different, and even different flavors can be presented through different ratios of coffee and milk.

What coffee beans to use for latte coffee

So what kind of coffee beans should be used to make latte? Generally speaking, the coffee beans used to make latte coffee must be suitable for espresso machines, so coffee that is too light roasted is not suitable for making latte coffee. The darker the roasted coffee beans, the stronger the coffee flavor (caramel, bitterness) of the latte. The lighter the coffee beans, the more obvious the milky flavor of the latte will be. Therefore, the roasting degree should be selected moderately to make coffee and milk better compatible.

Because an espresso coffee machine has a very distinctive feature of amplifying the original flavor of coffee beans, and the acidity of lightly roasted coffee beans will be more prominent. If extracted with an espresso machine, the acidity will be more obvious, so it is not suitable for making espresso coffee.

For example, FrontStreet Coffee currently uses the in-house blended Sunflower Warm Sun series, which is Front Street’s most proud blend. It is a blend of Honduran sherry coffee and Yirgacheffe sun-dried red cherry coffee, blended into milk to highlight the rich chocolate, caramel, and tipsy flavors.

This front street blend is a blend of Yirgacheffe sun-dried red cherries and Honduran sherry. Front Street’s design concept for this blended bean is that it can be used in both Italian style and manual brewing. The flavor it exudes when used to make espresso has an obvious aroma of fermented wine. When you taste it, the acidity of citrus and berries emerges immediately, with the aroma of whiskey, and the aftertaste is dark chocolate.

Secondly, FrontStreet Coffee has also developed three other Italian coffee blends for coffee lovers to choose from. Each blend of coffee beans has its own characteristics, so you only need to choose according to your favorite flavor.

FrontStreet Coffee Front Street Blend 100% Arabica
Flavor:Soft, slightly sour, sweet, with a nutty sweetness. The overall feeling is not too irritating, mild, and the oil is medium.
Recipe:Colombia:Brazil=3:7

This front street blend is made from Brazil and Colombia. It tastes like a light roasted grassy aroma with a slightly bitter taste. It is sweet and smooth, with a pleasant aftertaste. This is because the coffee beans from the Cymbidium producing area in Colombia have a pleasant sour taste, a mellow smell, moderate acidity, and rich sweetness that is very durable.
The coffee beans from the Cerrado region of Brazil have a pleasant sweet and bitter taste and are extremely smooth in the mouth. So the combination is absolutely perfect.

FrontStreet Coffee Front Street Commercial Blend

Flavor:The sweetness of caramel, the flavor of nuts, cocoa, and dark chocolate, the balance of sweet and sour, a little bit of bitterness, and a long-lasting aftertaste.
Recipe:Colombia:Brazil:Robusta=3:6:1

前街商业拼配豆

This front street blend uses coffee beans from Brazil, Colombia and 10% Robusta coffee beans. The taste is classic. Front Street believes that this blend tastes rich in oil and texture, with the sweetness of caramel, and also has the flavor of nuts, cocoa, and dark chocolate. It has a balance of sweet and sour, a little bit of sweetness and bitterness, and a long-lasting aftertaste. This Front Street Commercial Blend uses the same proportion of Colombian and Brazilian coffee beans as FrontStreet Coffee's Front Street Boutique Blend 100% Arabica. The difference is that Robusta is added to provide rich oil and make the coffee taste more mellow.

FrontStreet Coffee Front Street Dark Cocoa Blend (100% Arabica)
Flavor:It has soft fruit acidity, caramel sweetness, nutty, dark chocolate flavor, smooth and viscous, but light taste.
Recipe:Yunnan: Brazil=3:7

前街黑可可拼配(100%阿拉比卡)豆

This blend is made from Brazil and Yunnan. Front Street believes that it tastes with soft fruit acidity and caramel sweetness, as well as nutty and dark chocolate flavors. It is smooth and sticky, but the taste is on the light side. This is because the natural conditions of Yunnan are very similar to Colombia, with high altitude, large temperature difference between day and night, mellow flavor, moderate sourness, rich and mellow taste, uniform particles, rich oil content and fruity aroma, and its quality and taste are similar to Colombian coffee. However, the taste is still slightly lighter than that of Colombia, while the coffee beans from the Cerrado region of Brazil have a pleasant sweet and bitter taste and are extremely smooth in the mouth. Therefore, the flavor of mixing these two coffee beans is also good, and this Front Street black cocoa blend (100% Arabica) coffee beans is very cost-effective and suitable for beginners in Italian style and small coffee shops.

The above are the four Italian coffee bean blends recommended by FrontStreet Coffee. Next, FrontStreet Coffee will share with you the proportions of making latte coffee.

As mentioned above, FrontStreet Coffee uses sunflower warm espresso blended beans. When extracting espresso, Front Street uses the Pegasus E98 espresso machine. The extraction parameters are as follows:

Pressure: 9 bar
Temperature: 90.5~96 degrees Celsius
Time: 20~30 sec
Pink to water ratio: 1:1.7~1:2
Powder amount: 12g (single espresso) 20g (double espresso)
Extraction concentration volume: 20ml (single portion) 40ml (double portion)

Front Street uses double espresso to make latte coffee. The flavor after extraction of coffee beans is: obvious fruit acid, lingering light berry aroma, rich wine aroma and chocolate flavor, and a pleasant aftertaste.

How to make a hot latte?

Milk: Full-fat fresh milk (Weiji fresh milk used in Front Street)
Temperature for whipping milk: 50-60 degrees Celsius (too low a temperature will not activate the lactose in the milk, and too high a temperature will destroy the protein in the milk, resulting in a grainy texture)
Milk foam thickness: 1 cm (milk foam thinner than 1 cm is used to make Australian white coffee, milk foam thicker than 1 cm is used to make cappuccino coffee)

How to froth hot latte milk?

Tips for frothing milk: Rinse before pressing the steam switch: let the steam pipe flush to drain the water from the front end to prevent the milk froth from being too wet (cover it with a clean rag to avoid random spraying.)

Insert the steam tube into the iced milk: let the steam rush into the milk. (Tube depth: If the diameter of the tube is inserted too low, it will only heat and cannot form milk froth. On the contrary, if the diameter of the tube is inserted too high, large bubbles will be produced and the latte art will not be beautiful. You can knock the table flat to burst the big bubbles.)

Position of steam pipe: The most perfect and foolproof steam injection point is when the steam pipe is inserted into the steel cup, the steam pipe is against the small mouth of the steel cup, and the nozzle points to the center and is slightly offset by 1cm.

蒸汽棒 奶泡616

Press steam on: Start frothing milk (when injecting steam, listen carefully - there should be the sound of drinking water blowing into the straw, and there should be no crisp feeling of bubbles hitting the metal steel cup. When the temperature reaches 50-60 degrees, it can be turned off.)

Recommended proportions for making hot latte coffee

Front Street recommends that the ratio of coffee to milk for making latte is 1:6.5, 40ml espresso: 260ml hot milk. Mix the milk and espresso in a circular motion to get a hot latte. The heating of fresh milk produces a better release of the sweet molecules of lactose. After mixing evenly with the espresso, the whole latte has the sweet taste of milk, which does not steal the limelight of the espresso. On the contrary, the flavor of the espresso is better reflected in the background of the milk.

FrontStreet Coffee hot latte taste and features:The aroma of whiskey, the acidity of lactose and coffee collide to create a milkshake-like sweetness, and the aftertaste is like hazelnut and other nuts.

How to make an iced latte?

Milk temperature: Refrigerator refrigerated milk
Ice cubes: mixed with milk in a ratio of 1:3
Amount of milk and coffee: Front Street recommends 300ml ice milk mixture: 40ml espresso

Add ice cubes and fresh milk, the total amount is: 300ml, then extract the double espresso liquid and pour the ice milk. If you put less ice cubes, remember to put more milk.
