FrontStreet Coffee has shared how to make several types of espresso. In addition to the more common coffees, many friends also responded to some uncommon coffees, such as piccolo coffee, piccolo latte, etc. So today I will share how to make a cup of "Internet celebrity" piccolo latte.
What is a piccolo latte?
Piccolo latte, in Italian, "piccolo' means small, and latte means latte (that is, milk). And because piccolo means "piccolo" in English, it has the name piccolo latte. Traditional piccolo coffee is made with 15-20 ml of espresso and steamed milk. Nowadays, people are generally accustomed to pouring the coffee into a 100 ml special glass for drinking.

Piccolo Coffee’s “origin” is not to be produced in stores
If there is a lot of controversy about the origin of Australian white, the piccolo was definitely born in Australia. It is said that it was invented by baristas out of consideration for reducing the waste of raw materials.

When debugging coffee beans, it is generally divided into two stages: espresso and milk coffee. The former is to feel the aroma of the beans themselves, and the latter is to test whether the flavor is masked when paired with milk. If every debugging is made according to the official production specifications, it is easy to consume too much caffeine, and it will be wasteful because it will be poured out without finishing the drink. So, they used the splitter handle to divide a handful of espresso into two shots. One shot was tasted directly, and the other shot was added with a small amount of steamed milk to make a small latte. In addition, sometimes when new beans are put on the shelves, the barista will concentrate them and make this kind of mini milk coffee for regular customers to try. Over time, this small latte began to be added to the product series and was named "Piccolo Latte" by Australian baristas.
How to make piccolo latte?
Piccolo latte is more like a smaller version of latte, with a smaller cup, smaller capacity, and less coffee and milk than common espresso. It is necessary to extract 15 to 20 grams of espresso coffee and match it with 4 times the milk.

Because FrontStreet Coffee does not produce piccolo latte, it does not have a special 100 ml glass. Today's demonstration will use a 150 ml cup to extract 30 grams of espresso and match it with 120 grams of milk. The ratio of coffee to milk is 1:4.
Today’s piccolo latte is presented with Front Street’s classic Italian blended coffee beans. Coffee bean information is as follows:

coffee bean name | Front Street Classic Italian Pairing |
Source of blend beans | Brazilian Half Sirado, Indonesian Mandheling, Vietnamese Washed |
Mixing ratio | 6:3:1 |
Flavor description | Dark chocolate, toast, nuts, caramel |
The espresso extraction plan is as follows:

Amount of coffee powder | :18g |
Coffee liquid volume | :30g |

How does a piccolo latte taste?
Piccolo latte has a coffee-to-milk ratio of 1:4, so the taste of espresso will be very obvious when you drink it, and it can highlight the classic caramelized aroma. It will taste much richer than latte, but it is not as unacceptable as espresso. The milk foam is as smooth as a latte, not as thin as an Australian white coffee, nor as dense as a cappuccino. The whole cup of coffee will taste like a milkshake, with obvious dark chocolate and rich nutty aroma, medium sweetness and moderate aftertaste.

piccolo latte piccolo,Australian white coffee flat white, the difference between coffee latte.
First of all, they have different cup sizes. Generally, piccolo coffee is 90ml.Australian white coffee150ml, latte 250ml.

Among them, the espresso in the piccolo is the front and middle section of a single shot (single ristretto), the Australian white is a double ristretto, and the latte is a double espresso. Secondly, the milk foam between them is different. The milk foam of Piccolo (little latte) and latte is thicker than that of Australian White (but thinner than cappuccino), while Australian White is thinner.

The same milk coffee family comes from Oceania, why doesn’t Piccolo have Australian white fire?
In the 1980s, Australians began toAustralian White(Flat White) was written on the fixed menu and soon spread to cafes in Europe and the United States. In China, the key to why Australian White has become a popular product is that Starbucks introduced it in 2015 and named it "Furi White" as its flagship drink. This also meant that Australian White at that time had become a mainstream drink in the world.

On the other hand, Piccolo Coffee's biggest advantage is that locals can enjoy a cup of silky and rich milk coffee at a lower price without having to worry about the feeling of fullness caused by a large portion. It conforms to the "quick fix" coffee drinking culture (in Australia, Piccolo is cheaper than other milk coffees), which is obviously different from our coffee drinking habits.
In addition to the problem of coffee drinking habits, the difficulty of producing is also a key reason why piccolo is rare in China. Whenever a cup of piccolo is produced, whipping only 60ml of milk in the milk vat into silky and dense milk foam is a great test of the barista's skills. Some baristas who have not yet mastered their skills reduce the difficulty by adding more milk, but this defeats the original purpose of this drink.
