Hanging ear coffee As the name suggests, it is usedear bagBrewed coffee.ear bagIt is a product developed by the Japanese. The filter bag is used to store coffee, and there is a small cardboard on each side, like two small ears, so it is called hanging ear coffee.

The portable ear-hanging bag is a patented design developed by the Japanese. The filter bag is used to store coffee, and the sides are small cardboards, like two small ears, so it is called hanging coffee. These two small ears are used to hang the coffee bag on the mouth of the cup for brewing. After brewing, the ear-hanging bag can be thrown away, making it convenient to drink freshly ground coffee like Pour over(V60) coffee.

Hanging ear coffeehistory

In 1990, the earliest hangingear coffeeIt was invented by Japan's Yamanaka Industrial Co., Ltd. and officially filed a patent application in the same year, but the mounting ear at that time was only unilateral.

In 1996, Daiki Shoji Co., Ltd. proposed an improved filter bag that moved the hanging ear parts to the lower edge of the filter bag, but the hanging ears were still only on one side of the filter bag.

In 1999, Daji Corporation applied to the European Patent Office for an invention patent for a double-sided hanging ear component. This improved design finally allowed the filter bag to stand squarely and stably at the mouth of the cup, and the opening of the filter bag could be fully opened. This design concept has become the mainstream in today's market.

In 2001, the Japanese invented the ear-hanging coffee bag, registered a patent, and then introduced it to the market. Because the operation is simple and portable, the brewed coffee tastes much more pure and fragrant than instant coffee. Today, ear-hanging coffee pods account for 15% of the market share of ordinary coffee in Japan.

What’s the best way to brew ear-mounted coffee?

Since it is the simplest drip filtration method, we will definitely not complicate it by thinking of appliances such as electronic scales and thermometers that are only needed for manual brewing. Preparing the ear-mounted earphones is nothing more than a pot of boiling water, a long cup, and an ear-mounted ear-mounted bag. Even the amount of water to be filled is a matter of "guessing."

As the saying goes, simplicity must be kept simple, and the sense of ritual is indispensable. It is relatively easy to determine the amount of water to pour into an ear-hanging bag for making hot coffee. For example, the ear-hanging bag from a former street store is 10 grams per small bag. Follow the hand-made powder-to-water ratio of 1:15 to 1:18. It is recommended to inject 150-180ml of water.

Usually, you first pour a small amount of hot water into the ear-hanging filter bag to moisten the coffee powder. Pour the first part to 1/2 of the filter bag and simmer for about ten seconds. Then pour water into the center twice in a row until the ear-hanging bag is 80% full. After all the coffee liquid in the filter bag has dripped out, continue to add water until the last section of filtering is completed. If the water is filled until it is full, the water accumulated in the upper layer will easily bypass the "powder layer" and filter out directly from the side of the ear-hanging bag, resulting in a weak coffee taste.

After several tests, Front Street injected water in three stages, which took about one and a half minutes, and the total water injection volume was basically around 150ml. If you want a lighter taste, add a little more until it is 80% full, so it will be about 180ml.

How to adjust the water filling amount when making iced coffee in an ear-hanging bag?

When changing from hot hand brewing to ice hand brewing, we need to separate part of the water and replace it with ice cubes. The same goes for ear-mounted bags. However, the coffee powder in the ear-hanging bag usually adopts the grinding degree for hot brewing, so you can only adjust the powder-to-water ratio or extend the soaking to increase the extraction concentration.

For Front Street, the ratio of powder to water for hand-brewing is 1:10, that is, 100g of hot water is injected. The amount of water in the wet powder layer remains unchanged, and the water level in the two sections after steaming becomes five points full, that is, the three consecutive sections are 1/2 of the filter bag, and the total water volume is about 90 to 105ml. Until all the liquid is filtered, pour it into ice cubes to cool. When the cup starts to freeze, you can remove the remaining crushed ice to avoid further dilution.

After the above experiments, Front Street found that the iced coffee brewed in this way can have the basic flavor and tonality of beans, and the concentration is relatively moderate. Front Street recommends that the water flow be as small as possible throughout the process, otherwise the filter bag will be full in a few seconds, and subsequent water injection will be more difficult. A kettle with a slender mouth can help us better control the water flow.
