Nowadays, if a sophisticated coffee drinker wants to drink a standard cup of Pour over(V60) coffee, he or she needs to prepare a variety of tools at home: a Pour over(V60) pot, a sharing pot, a filter cup, a filter paper, a thermometer... They are expensive to use, but they take up space when not in use. Isn’t it possible to drink a cup of exquisite coffee without a Pour over(V60) coffee set? If this problem were brought up to the barista at Front Street Coffee, the barista at Front Street Coffee would immediately pull out the dusty French press.

The French Press, or French Press, also known as the French Press, is the easiest and most convenient way to brew coffee. In fact, this kind of pot appeared very early. Around the 1850s, a craftsman and a businessman jointly obtained a patent for a "piston filter coffee device": a metal pot connected to a movable rod, with holes at the bottom and a layer of flannel sandwiched above and below. By manually pressing the lever all the way, the coffee grounds will be isolated at the bottom of the pot, resulting in a cleaner cup of coffee.

After continuous technical improvements, in the late 1920s, a company in Milan, Italy registered a patent for a modified version of the French Press Pot, which is now known as the French Press Pot. Since then, the French Press Pot has been known to the world.

But in the past, the main way to use the French press was not to make coffee, but to make tea. Usually tea filters are thicker and coffee filters are smaller. If you love coffee but don’t have the time, or don’t have an expensive coffee machine at home, a French press is a great way to do it.

Because the coffee brewed by the French press has a thicker taste and fuller flavor. Front Street uses Oiran coffee beans as an example to explain how to brew delicious coffee with a French press. As usual, Front Street will first introduce to you the information behind this coffee bean.

Oiran coffeeThe beans are produced at the Buku Abel processing plant in the Hambera sub-producing area of Guji, Ethiopia, and use the sun-drying method. In 2017, Ethiopian DW Company sent the sun-dried coffee beans from the Buku Abel processing plant to participate in the TOH competition that year, and won the championship in the TOH Ethiopian sun-dried category with its rich strawberry cream flavor. Beijing Yisheng Bean Merchant introduced the same batch of champion coffee beans into China. Because the rich strawberry cream flavor was so outstanding, they believed that as long as they improved the post-processing of the green beans, they would have the chance to become the next popular coffee bean, so they named it "Oiran" with high hopes, which means "the head of a hundred flowers."

In the same year, almost everyone in the China Division of the World Coffee Brewing Competition used Gesha coffee beans, but contestant Li Jianfei used the same batch of Oiran coffee beans and won second place. When people asked about it, they discovered that it was Oiran coffee beans from Ethiopia, and Oiran coffee beans became famous.

The Oiran coffee beans are named after "Oran X.0", which increases with the increase of the year, Oiran 2.0 in 2018, Oiran 3.0 in 2019, Oiran 4.0 in 2020, and Oiran 5.0 in 2021. The arrival of 2022 means that Oiran 6.0 is coming soon. FrontStreet Coffee immediately ordered a batch. I believe that in the near future, friends will be able to see Oiran Coffee 6.0 on FrontStreet Coffee’s bean list.

Today, FrontStreet Coffee has nearly half a hundred types of coffee beans, including Oiran 5.0 and small-grain Oiran coffee beans. Front Street found small particles of Oiran coffee beans in 2018 and 2019. Front Street found through comparison that these small particles of Oiran coffee beans are the main source of the aroma of Oiran coffee. In 2020, DW Company independently processed the small-grain Oiran coffee beans and launched the brand of small-grain Oiran coffee.

Front Street conducted cupping comparisons between Oiran 5.0 coffee beans and small-grain Oiran coffee beans and found that the flavor of the small-grain Oiran coffee is closer to the strawberry cream flavor of the 2017 sun-dried championship batch; while the flavor of Oiran 5.0 is more inclined to the citrus, berry tones and tea taste of the Guji production area.

Since my hands are never the hands of a barista, no matter how delicious the Oiran coffee I drink in a cafe is, I still can’t get the taste out of it when I get home. Instead of complicated water-injection brewing, friends have focused on the simplest brewing method, brewing Oiran coffee beans in a French press.

But here comes the question, how to brew Oiran coffee to prevent it from being bitter and astringent, and how to get a delicious cup of Oiran coffee?

FrontStreet Coffee French Press Brewing Tutorial

Brewing equipment: French press

Water temperature: 90 degrees Celsius

Amount of powder: 15g

Pink to water ratio: 1:15

Grinding degree: Chinese standard No. 20 screen pass rate 70%

First, pour an appropriate amount of hot water into the French press to fully preheat it, and pour out the hot water.

Pour 15 grams of coffee powder into the French press and 225 grams of hot water at 90 degrees Celsius.

Pull the pressure lever to the highest position and close the lid, soak for 4 minutes.

After waiting for 4 minutes, gently and slowly press the lever down to a quarter of the way of the French press, pour out the coffee liquid, and enjoy a cup of coffee.

The Oiran coffee brewed by Front Street through the above parameters and steps can be felt in the mouth like a mixed berry aroma, with obvious compound berry juice and creamy taste, and is overall full and mellow.

Oiran coffee beans are medium-light roasted beans. After the coffee flavor substances come into contact with hot water, the flavor substances precipitate at a slower rate. Therefore, Front Street recommends using a higher water temperature to accelerate the precipitation of flavor substances.

When producing coffee, Front Street generally uses a three-stage water injection method in the filter cup. Since the injected hot water will contact the coffee powder particles in a short period of time and eventually drip down into the sharing pot, Front Street generally uses a Chinese standard No. 20 sieve with a grinding rate of 80% when brewing Oiran coffee, which is finer than that used in French press pots.

However, coffee brewed with a French press is always coffee that is steeped in hot water at a higher temperature for a longer period of time. In order to avoid the bitterness caused by over-extraction, Front Street recommends using a coarser grinding degree, with a Chinese standard No. 20 sieve passing rate of 70%. The coarser grinding degree means that the coarser the size of the coffee particles, the smaller the overall contact area with hot water. If the grinding degree is too fine, it is easy to over-extract; if the grinding degree is coarser, it is easy to under-extract, resulting in a watery taste and over-acidity.

You can now buy the above coffee beans online at the Taobao store “FrontStreet Coffee” (前街咖啡).
