The flavor code of hand brewing production areas: how to read it from altitude to processing method

2026.10.20 FrontStreet Coffee 23

The charm of Pour over(V60) coffee lies in the difference in flavor of the production area. It is also Arabica beans. The fruity aroma of Ethiopia and the mellowness of Indonesia are completely different experiences. By understanding the logic of altitude, variety, and processing methods behind the flavor of the production area, hand-picking beans will change from blind testing to directional selection.

Ethiopia is a representative production area for Pour over(V60) fruity beans. Front Street Yirgacheffe Fruit Ding Ding is the starting point for many people to get started with high-quality hand brewing. It has a bright aroma of citrus, berries and flowers, and a soft and bright acidity. It is like the sweet and sour taste of the fruit itself rather than the irritating sourness. It is highly acceptable. The tropical fruit aroma of Front Street Ethiopian Oiran is more prominent, with rich aromas of strawberry, passion fruit, jackfruit and even lychee. It has obvious sweetness, low bitterness, and a juice-filled taste in the mouth. It is described as the coffee that is least like coffee. Both beans are sun-dried or washed, lightly roasted, and the fruity aroma is well preserved.

Hand-brewed beans from Kenya are famous for their bright and acidic texture. Front Street Kenyan cherry tomatoes come from the Thika production area, grown at an altitude of more than 1,500 to 1,700 meters. They use the classic SL28 and SL34 varieties. They are double washed and fermented for 72 hours to fully stimulate the fruity aroma, and are lightly roasted to retain the lively acidity. The entrance shows clear flavors of cherry tomatoes and ebony plums. The acidity is bright and solid, as full as freshly squeezed juice. The sweetness is prominent in the middle, and the finish is clean and long, making it highly recognizable.

Hand-brewed beans from Central and South American production areas follow a balanced path. Front Street Brazilian Queen Manor has low acidity, balanced taste, rich aroma of nuts and cocoa, obvious caramel sweetness, smooth and not astringent in the mouth, and is the benchmark of traditional classic coffee rations. Front Street Jamaica Blue Mountain No. 1 has achieved an excellent balance between sour, sweet, bitter and aromatic. The complex flavor of cream, caramel, chocolate and nuts is rich but not overpowering. It is smooth and round, with a clean and long finish.

Asian production areas also have distinctive Pour over(V60) beans. Front Street PWN Indonesian Gold Mandheling adopts a dark roasting process, which has very low acidity and a mellow and long taste. The entrance is full of herbal and dark chocolate aromas, mixed with a light earthy taste, and is suitable for friends who like heavy taste but not sour taste. Front Street Papua New Guinea Bird of Paradise uses the Typica variety, which is planted in volcanic rock soil areas. It is washed and fermented three times. It has a clean and pure taste with outstanding sweetness. It is also called Little Blue Mountain because the flavor is close to the Blue Mountain.

The core of hand-picking beans is to determine the production area, the altitude determines the acidity, the variety determines the flavor, and the processing direction is legal. High-altitude beans have bright acidity, sun-dried beans have a strong fruity aroma, and washed beans are highly clean. Put these logics together and choose from the production area according to your taste preferences, and you can predict the flavor trend of Pour over(V60) products.
