"I can't do it by hand. What kind of coffee brewing equipment is suitable for coffee novices?? "Faced with this problem, FrontStreet Coffee will first recommend a French press that is easy to operate and convenient. What is the charm of the French press that can conquer coffee lovers who don’t know how to brew by hand?

French pressCoffee extraction principle
The French press originated in France around 1850. It is a simple brewing device composed of a heat-resistant glass bottle and a metal filter with a pressure rod. The invention of the appliance itself was for tea brewing. Later, someone had a sudden idea and put in coffee powder and found that the brewed coffee was very mellow. By reducing the pore size of the metal filter, the French press is also widely used by coffee lovers.

French pressCoffee is mainly extracted by soaking. Within a fixed volume, a certain amount of water evenly dissolves the substances in the coffee powder. In the extraction process, the main influencing factor is time. The longer the brewing time, the more substances will be extracted from the coffee until it is saturated, that is, the longer the brewing time, the stronger the taste.

Then at this time, some friends will ask Front Street: "Will the bad flavor be soaked out when the French press is soaked for a long time?"

The long time mentioned here does not mean brewing for more than ten or twenty minutes. Generally, the soaking time of the French press is 4 minutes. The water temperature for soaking coffee is set at 88°C-91°C, and the grinding degree of the coffee powder will be relatively coarse. Since the glass body of the French press does not retain heat for too long, the water temperature will continue to drop during the soaking process. At the same time, the coffee powder particles are coarse, and the flavor substances of the coffee will be slowly released. 4 minutes is the best soaking time for making coffee with a French press, but it should not exceed 6 minutes. When the 4-minute steeping is completed, press down the filter and pour the coffee into other containers before tasting.

What are the characteristics of coffee steeped in a French press??

1. Compared with drip filter Pour over(V60) coffee, immersion French press coffee tastes more mellow!

The French press filters the coffee grounds through a metal filter, and the metal filter has a larger pore size than ordinary filter paper, which can retain most of the coffee oil during the filtering process. Front Street noticed that there will be a thin layer of oil on the coffee made by the French press. Our common Pour over(V60) coffee is made by injecting water through a layer of coffee powder and high-density filter paper. When the coffee liquid passes through the filter paper, most of the oil will be filtered out, and the coffee will feel much cleaner when it comes out. Although it is more mellow than Pour over(V60) coffee, it also leaves a lot of fine coffee grounds due to the design of the metal filter. It is not uncommon for a pot of French press coffee to end up with coffee grounds.

2. The coffee soaked in the French press highlights the original taste of the coffee.

The extraction mode of the French press is similar to that of cupping. Both are immersion extractions. The advantage is that it minimizes human influence factors, best reflects the original taste of the beans, and the flavor of the coffee will be more concentrated. What are human factors? For example, Pour over(V60) coffee can change the expression of coffee flavor by the speed of water injection, or the expression of coffee flavor will be different when brewing with different filter cups. But there is no such thing as a French press. There are only three things that can affect the flavor of coffee produced by a French press: grinding size, water temperature, and soaking time.

How to make coffee using a French press?
Front Street brewed this time using ingredients fromCosta Rican Musician Series Mozart Coffee Beans, this is a coffee with the fermentation of dried fruits, white floral aroma and obvious sweet and sour taste. The brewing parameters are as follows:

莫扎特2

Amount of powder: 15g
Pink to water ratio: 1:15
Grinding degree: medium coarse grinding (pass rate of No. 20 standard sieve is 68%)
Water temperature: 90℃
Soaking time: 4 minutes

First, preheat the French press with warm water and drain away the warm water. Pour the ground coffee powder into the French press, grind it slightly coarsely, and then inject 225ml of hot water (90°C). The water injection can be larger (the injection is completed in about 3 seconds), and let the coffee powder tumble to improve the extraction efficiency. After filling the water, pull up the filter, cover the pot, and soak for 4 minutes. After 4 minutes, gently press down the filter rod until it reaches 1/4 of the pot body to prevent the fine powder at the bottom from flowing upward. After pressing down, pour out the coffee liquid and enjoy.
