Ethiopia, a recognized birthplace of coffee, has unparalleled varieties and high quality, such as the familiar Oiran, Geisha Village, Guji, Sidamo... all of them are the face of Ethiopia. They are not only important local economic crops and export commodities, but also their long-standing culture. So coffee can be said to be the most proud thing for Ethiopians.

The terrain in Ethiopia is very high above sea level, and the vast highlands create an excellent climate environment and significant temperature differences between day and night. There are clouds and mist in the morning, wind blowing from the mountains, and plenty of sunshine in the afternoon. At night, the temperature drops to more than ten degrees, but there is no frost. It is an excellent environment for growing coffee. There are many production areas in Ethiopia. Different lands and microclimates, as well as differences in post-processing methods, result in different coffee flavors. The most commonly heard flavors in domestic coffee shops are Yirgacheffe, Sidamo, and Guji. Their unique aromas are spread by word of mouth in the coffee circle.

Because of Ethiopia’s superior congenital conditions, coffee trees can be seen everywhere, and every household will plant them together with other crops in their front and backyard. The production of coffee is not large, so the coffee cherries are usually picked and sent directly to the processing station in the town for processing, and finally sold under the name of the processing plant (cooperative). This kind of pastoral coffee is the most common local planting model, and it also brings basic income subsidies to many Ethiopians.

Six must-drink premium Pour over(V60) coffees in Ethiopia:

1. Front Street washed Yirgacheffe coffee beans

水洗耶加雪菲0400

Yirga cheffe is a small town in Ethiopia, with an altitude of 1,700-2,100 meters. It is one of the highest altitude coffee-producing areas in the world and is synonymous with Ethiopian specialty coffee. Lake Turkana, Lake Abaya, and Lake Chamo bring abundant water vapor here. In the Rift Valley, represented by the Misty Valley, there is mist all year round, like spring all year round, gentle breeze, cool and humid, thousands of coffee trees thrive, giving birth to Yirgacheffe's unique floral and fruity aroma, and the unpredictable and unique terroir. The flavor of Front Street Yirgacheffe refers to the rich citrus lemon acidity and strong jasmine aroma. The taste is light and elegant, with a tea flavor, and it tastes like refreshing and clean lemon tea.

2. Front Street Fruit Cooperativecoffee beans

果丁丁2

The Fruit Tintin Cooperative is located in the Woka production area at the southeastern end of Yirgacheffe. It was originally part of the Woka Cooperative under the Yirgacheffe Union YCFCU. But later, as people pursued the traceability of green coffee beans, independent "single production areas" were unearthed one by one by coffee hunters around the world. Therefore, in 2012, Guodingding, which has about 300 farmers as members, independently established the "Guodingding Cooperative". Because the pulp is peeled off before drying, the inherent aroma of Front Street Guodingding coffee is clearer and more thorough, showing citrus and lemon tones and elegant white floral aroma, and the overall flavor is bright and delicate.

3. Front Street sun-dried red cherriescoffee beans

Unlike washing, sun-dried coffee will first remove damaged or moldy fruits. After drying in the sun for two weeks, when all the sugar and essence of the pulp have penetrated into the coffee beans and the moisture content has dropped to 12%, the hardened pulp, pectin layer and pods are scraped clean with a planer. The coffee beans taken out are also tested for density and color to eliminate defective beans. Workers then use their naked eyes to pick out the defective beans that have slipped through the sieve, and screen them step by step. Therefore, the coffee beans obtained are all high-quality, ensuring their clean and refined quality with a rich and charming fruity aroma. 4. Front Street Sunbathing Oirancoffee beans

Sidamo is located in southern Ethiopia. Sidamo coffee beans used to include Yirgacheffe coffee and Guji coffee. However, the ECX trading system has made Yirgacheffe and Guji independent from Sidamo. Sidamo coffee is rich in acidity and has a strong aroma. Compared with Yirgacheffe in aroma, it is even better. It is very suitable for people who like strong flavors but don’t like too strong flavors. It achieves a perfect balance and neutrality between aroma and taste. Front Street Sundried Oiran is a typical example. The pleasant berry, citrus aroma and sweet mango flavor combine to form a flavor like black tea.

5. Qian Street Hamathew 74158coffee beans

哈马修38fb

Also belonging to the Sidamo production area, Hamathew Processing Plant has become a permanent player on the winning list of the Ethiopian Green Bean Competition with its excellent quality and unique flavor, and has attracted the attention of many coffee lovers. The coffee produced at the Hamathya processing plant is mainly based on the 74 series of disease-resistant varieties released by JARC (Jima Agricultural Research Center). The 74158 has small particles and a prominent floral and fruity flavor. Front Street Hamathew 74158 has an alluring aroma. You can smell some sweet flavors similar to perfumed lemon, strawberry, and carambola. The entrance is very obvious with the sweet aroma of strawberry, carambola, and green grapes, and then a faint floral fragrance gradually emerges.

6. Front Street Kaffa Forestcoffee beans

卡法森林

Different from our impression of the pastoral planting model in which farmers plant coffee trees in their own backyards, the Kaffa Forest is the most representative for producing wild coffee. The coffee trees all grow in a shaded environment at an altitude of 1,400 to 2,100 meters. The original ecology, microclimate, red soil, abundant rainfall and other favorable factors provide an excellent growing environment for the coffee trees. Front Street Kafa Forest coffee beans are medium-light roasted. After grinding, they have an obvious white floral aroma. There will be bright citric acidity in the mouth, with the flavor of sweet orange and bergamot. The aftertaste has a slight melon and nut aroma, and the taste is like green tea.
