Panama is a Central American country bordering Costa Rica to the west and Colombia to the east. Anyone who knows something about single-origin coffee should know that Panama coffee is famous in the coffee world for Geisha (the name of Geisha) from the Emerald Manor. It can be said that it is a country that strives for excellence in coffee and is rich in high-quality coffee.

Panamanian coffee is famous for the Geisha of Emerald Estate, and the production area where Emerald Estate is located is also quite famous; it is the Boquete production area in Chiriqui Province. Boquete is a town in the province of Chiriqui. It is located near the border between Panama and Costa Rica, close to the famous Baru volcano. It has beautiful scenery, fertile soil, and the climate and soil are very suitable for producing high-quality coffee.

There are also many excellent manors scattered in the Poquette production area. In addition to the famous Jade Manor, there are also well-known manors such as Aleida Manor and Akaba Manor, all of which produce high-quality specialty coffee. This is not only due to the superior ecological conditions of the Poquite region of Panama and the fertile volcanic ash soil of the Baru volcano. Another important factor is that the microclimate in the Poquete Highlands of Panama is a unique and important resource for the specialty coffee in the Poquete production area; this is Panama's east-to-west environment that allows cold air to flow through the central mountains and converge above 6,500 feet. This creates a variety of microclimates in the Poquete area, making the temperature and rainfall very suitable for plant growth, so the coffee trees grown here grow very well.

In a unique planting environment like Poquette, there is naturally not only one such as Emerald Geisha, which is a king of coffee in terms of flavor, quality and value. But I think drinking Geisha every day is quite luxurious, and even if there is no financial pressure, it is not like eating shark's fins and bear's paws every day. The same is true for coffee. You need to cover a wide range of topics to enjoy the fun of tasting coffee.

Well, in the land of Poquet, there is a bean that is particularly cost-effective. And it has a very beautiful name: Butterfly. Panama Butterfly coffee beans have 40% high-quality Gesha blood. They are composed of three varieties: Geisha, Caturra, and Cadoai. They are planted in the Baru volcanic area of Poquet. It grows in a volcanic area at an altitude of 1,600 meters. The processing plant uses fine water washing. Panama's special local microclimate results in abundant rainfall in the area and a large temperature difference between day and night. Coupled with the unique volcanic rock soil in the volcanic area, as well as careful harvesting and fine processing, this coffee performs very well in terms of thickness, acidity, and floral aroma.

What’s even more surprising is that on the basis of very excellent quality, the very affordable price makes this coffee beans extremely cost-effective. The special thing about this coffee bean is that it is composed of three varieties, of which 40% is Gesha variety, giving this coffee a very obvious Gesha flavor. According to the information obtained, due to the historical reasons of the manor, in order to pursue yield at that time, the early Geisha variety was planted together with the two varieties of coffee trees, Caturra and Cadouai. In order to facilitate picking, the coffee farmers did not reclassify the three varieties, but directly mixed the three varieties. Later, as Geisha became famous and the price soared, the processing plant began to perform refined washing treatment on such a coffee bean.

Nowadays, there are many methods of washing, but generally, after the coffee cherries are picked, the floating beans are removed, the pulp is removed, and then the coffee beans are soaked in a fermentation tank. The enzymes in the water will soften the mucus attached to the endocarp of the coffee beans, and the natural yeast will decompose the sugar in the mucus. This process is called fermentation. After the fermentation is completed, the coffee beans are moved to the sun drying field to dry. During the drying process, the coffee beans need to be constantly turned to ensure uniform drying. Finally, the shells are stored in the warehouse, and the green beans are shelled and bagged after the green bean merchant places an order. The coffee produced in this way has a clean taste, emphasizing bright and lively acidity, as well as clear fruit flavor and floral aroma.

Therefore, it is conceivable that due to the superiority of Huadie in terms of variety, coupled with the exquisite processing methods, if medium and light roasting is used, the final flavor of this bean can be completed. You will definitely give great recognition to this flower butterfly, which has the unique floral aroma of Geisha, the flavor of Nanyang fruits and berries, the sweetness and smoothness of honey, and the long-lasting aroma and aftertaste.

 Cupping:

Fragrance (dry fragrance): jasmine, citrus, tea, honey

Aroma (wet fragrance): berry, floral, oily, vanilla, citrus

Flavor: The juice is sweet, sour, delicate and non-irritating, with good cleanliness, bergamot, honey, citrus, spice, floral, berry, tea, cherry, delicate aftertaste, long-lasting aroma, the classic Geisha flavor of Jade Manor.

Taste description: Jasmine, bergamot, citrus, tea, tea, honey, berries, vanilla, bright acidity! Butterfly containing Geisha species is a highly cost-effective specialty coffee bean!

As we all know, Geisha coffee is famous for its rich floral aroma and complex fruit tones. The Front Street roaster hopes that this washed flower butterfly can retain more of the high-quality acidity of Geisha, so he chose a medium-light roast. This roasting degree does not change the high hardness of the beans at high altitudes, so a certain extraction rate needs to be increased during brewing to present a fuller flavor level. Front Street will use higher water temperature and finer grinding degree to stimulate more aromatic substances. In addition, Front Street hopes that its floral and fruity charm will be more clear, so it will increase the ratio of powder to water, using 1:16.

In order to improve the coffee extraction rate and avoid over-extraction while highlighting the sweet and sour flavor levels, Front Street Coffee baristas use V60 filter cups. The body of the V60 filter cup has diversion ribs connecting the top and bottom and a large round hole in the center to speed up the falling speed of the water. The spiral-shaped exhaust groove design lengthens the water flow path and increases the contact time between coffee powder and hot water. Each water flow converges along the groove to the center of the filter cup. The pressure on the coffee powder is concentrated, and the extracted coffee has a richer layered texture.

Filter cup: V60
Water temperature: 91-92℃
Powder amount: 15g
Pink to water ratio: 1:15
Grinding degree: the size of fine sugar (sieve powder to 80% in a No. 20 sieve bowl)

Three-stage extraction: Use 30g of water to steam for 30 seconds in the first stage, and inject evenly in a circle to form a drum. Inject 95g of hot water into the second stage. When the powder layer drops to half, start injecting 100g of the third stage until all the coffee is dripped. Pay attention to the center point to start pouring water, and the small flow of water will circulate softly and vigorously throughout the process to avoid uneven extraction. Finally, after the coffee dripping is filtered, shake it gently first, and then you can start to taste the flavor of Butterfly Coffee from high temperature.
