A reader submitted that he bought a bunch of hanging coffee for a recent event, so he wanted to brew it in a different way, and then he found a slightly tricky way - to brew it with milk. But because he had never tried it, he was worried that it would overturn the situation, so he asked Front Street if it was feasible. For those who are willing to help coffee people, Front Street has always had no problem. Without further ado, let’s get started~

Is it possible to use milk to wash the ear hooks?
In fact, it is not the first time that milk has appeared in the Front Street experiment as the protagonist of coffee extraction. We published an article last year "Is it possible to make Pour over(V60) coffee with milk?", it is mentioned in it that because milk contains too many substances, the extraction ability is difficult to compete with conventional hot water. At the same time, if it is heated to boiling hot, a large amount of protein and lactose substances will be lost, which will make the taste worse. Therefore, it is obviously not feasible to directly apply conventional parameters and techniques to use milk to rinse ear hangings.

In order to solve the problem of lack of milk extraction ability, Front Street plans to steam it with hot water first, allowing the coffee powder particles to absorb water to help better release the flavor substances in the later stage, and then heat the milk to 75℃, and then injected in two stages.
In order to avoid the sour taste or bland taste of the brewed milk coffee, Front Street still recommends that you give priority to the categories marked with medium and dark roasts, such as Front Street's Bird of Paradise, Queen's Manor, Golden Mandheling, and Front Street Whelan coffees have obvious caramelization aroma, so they can better coordinate with hot milk;

But if you are sensitive to bitter tastes, it is more recommended to drink acidic coffee with a sense of fermentation, such as Front Street Xi Jiao, Big Navel, Strawberry Candy, Sunflower Warm Sun Blend, etc., because this type of coffee combines candied fruit, fruity aroma, fermented wine taste and a certain caramelized flavor, and is suitable for drinking with milk.
What if you use milk to wash the ear hooks?
First, prepare a long glass and a pack of fresh Front Street Strawberry Candy Coffee, tear it open and hang it on the edge of the cup (in order to give you a more intuitive reference, Front Street will add timing and weighing during this brewing process).

For the first paragraph, use 90 to 93℃Pour hot water into the hanging ear bag until the filter bag is half full (after boiling, turn off the heat and open the lid and leave it at room temperature for 1 minute). The amount of water is about 25g. Be careful to keep the water flow as small as possible. If you use a long-necked kettle, you can add circles appropriately;

After the coffee liquid has finished dripping, start injecting the second section. Use 75°C hot milk (too hot to touch) and pour the powder layer into the filter bag until it is 90% full. When the coffee liquid is about to dry up, you can continue to inject the next section until it is 90% full. The total amount of water and milk is 150g.

Visually, the whole cup of coffee has a strong milk tea color. Looking at the taste of the coffee, Front Street believes that the richness and aroma are acceptable. When you taste it directly, you can taste the flavors of strawberry jam, raisins, and cream. Whether you drink it directly or with ice, it has a good taste.

However, since the fine powder of coffee will expand at an accelerated rate after contact with milk, thus blocking the gaps in the filter bag, the flow rate can be seen to slow down greatly during the second stage of extraction, and the total dripping time is 11 minutes.
In addition, coupled with the preparation time of various raw materials, it took 20 minutes to get the milk coffee for the large belly button ear-hanging bag on Front Street Street. Moreover, the tools for heating milk had to be cleaned, which obviously ran counter to the original intention of the ear-hanging - convenience. Therefore, for those who want to use the ear-hanging bag to quickly make milk coffee, Front Street does not recommend this direct injection method.

Since hanging ears have been developed in China for many years, people have also explored many novel ways to combine milk with them in their daily lives. There happen to be two kinds here in Front Street. One is to first use hot water to get a rich black coffee, and then add it according to the proportion.appropriateFresh milk, please refer to this article for specific operations.How to make latte coffee with an ear-hanging bag?”, I won’t repeat too much about Qian Street here.

The other one is not only more suitable for those who love iced milk coffee, but the steps are also very simple. As long as you have ear-mounted coffee bags, a bottle of milk (fresh milk tastes better), and a refrigerator, you can easily achieve the freedom of "latte" after sleeping.
The operation is very simple. After taking out the ear-hanging bag, there is no need to tear it open. Just peel off the paper shell on the package, then throw it "nakedly" into the milk. After tightening the bottle cap, shake it up and down vigorously to let the milk soak the coffee powder inside. Since it is a low-temperature extraction, Front Street believes that the ratio of coffee and milk does not need to be too strict, as long as it falls roughly between 1:12 and 1:15. For example, a 10-gram pack of hanging ear coffee here on Front Street will add 150ml of fresh milk.

Then, we put the milk soaked in the ear-hanging bag into the refrigerator to refrigerate overnight. The next morning (it took about8~12hours), you can take it out and shake it vigorously a few times, clip out the ear-hanging bag, and the milk coffee is ready.
