Hand-brewed coffee can well express the flavor of coffee beans. Generally, Front Street recommends hot Pour over(V60) coffee, but the scorching summer heat makes customers prefer iced Pour over(V60) coffee. Many customers will ask, what is the difference between iced hand brewed coffee and hot brewed coffee? Front Street is here to give you the answer today.

What is the difference between ice brewing and hot brewing in brewing?
Ice hand brewing is actually an improvement on hot hand brewing, aiming to get a cup of iced coffee with a flavor that is comparable to hot hand brewing. Take the brewing plan of Front Street Coffee as an example.
When Front Street brews hot hand brewing (lightly roasted coffee beans), it uses 15g of coffee powder, the grinding degree is 80% through the No. 20 standard sieve, the water temperature is 90-92°C, and the powder-to-water ratio is 1:15, that is, the total water injection volume is 225ml. The brewing method uses a three-stage water injection. In the first stage, 30ml is injected and steamed for 30 seconds, in the second stage, 100ml is injected, and in the third stage, 95ml is injected.

The plan for Front Street Brewing Ice Hand Brewing is to use 15g of coffee powder, the water temperature is still 90-92°C, the grinding degree is finer than that of hot coffee, the pass rate of No. 20 standard screen is 85%, and the ratio of powder to water is 1:10, that is, the total water injection volume is 150ml, and 100g of ice cubes are added for cooling and dilution. The brewing method uses three stages of water injection. In the first stage, 30ml is injected and steamed for 30 seconds. In the second stage, 60ml is injected. In the third stage, another 60ml is injected. Then pour the coffee liquid into a cup filled with 100g ice cubes and shake evenly.

In the comparison of brewing methods, ice-brewed coffee beans are ground finer and use less water to brew, resulting in a high-concentration hot coffee liquid, which is then cooled and diluted with ice cubes to form iced coffee.
What's the difference between the two?
In order to comprehensively compare the flavor and taste differences between iced Pour over(V60) coffee and hot Pour over(V60) coffee, Front Street used Front Street Ethiopian Oiran (light roast), Front Street Brazilian Queen Estate Yellow Bourbon (medium roasted), and Front Street Indonesian Golden Mandheling (dark roasted) for comparison.

Front Street Ethiopian Oiran
Hot Pour over(V60) coffee: It exudes the aroma of berries, tastes like citrus and berry acidity, and has a good sweetness. It has rich layers and a smooth taste.
Iced Pour over(V60) coffee: The aroma is weak, with a light floral aroma, and the taste is citrus acidity, soft and comfortable, with bursts of tea aroma, overall very fresh and clean. The taste is cool and thin.

Brazilian Queen Manor on Front Street
Hot Pour over(V60) coffee: Aroma of nuts, rich buttery peanut flavor, and the sweetness of sucrose is very obvious. The taste is also very full.
Iced Pour over(V60) coffee: The aroma is not obvious, with slight fruit acidity, sucrose-like sweetness and chocolate aftertaste. The overall cleanliness is high, but the taste is thin compared to the hot one.
Front Street Golden Mandheling
Hot Pour over(V60) coffee: The aroma of caramel chocolate, the taste is rich and mellow, with the flavor of chocolate and spices, and the sweetness of caramel is obvious in the aftertaste.
Iced Pour over(V60) coffee: The aroma of roasted nuts, the overall flavor is chocolate, herbs, nuts, clean and single taste. The rich taste of Mandheling is not reflected in the ice brew.

Generally speaking, the flavor expression of hot Pour over(V60) coffee is richer and more comprehensive. This is why Front Street generally recommends customers to try hot single-origin coffee. Although the overall flavor of iced Pour over(V60) coffee is lighter and more acidic than hot Pour over(V60) coffee, some coffee beans are also very delicious when made into iced Pour over(V60) coffee. Especially in this hot summer, a cup of delicious iced Pour over(V60) coffee is often more popular.
But not all iced hand brews made from coffee beans are delicious. For example, the full-bodied coffee represented by Mandheling from Front Street is very delicious when hot, but when brewed over ice, the flavor is greatly reduced.

Of course, there are also some coffee beans that are very delicious when made into iced coffee. For example, last year’s Front Street Ethiopian TOH Washed Champion Bean Inflorescence, when used in Pour over(V60) iced coffee, has a flavor similar to honey grapefruit tea. Front Street also recommends using some specially processed coffee beans with outstanding flavors to make iced coffee, such as Front Street Strawberry Candy, Front Street Blackberry, Front Street Colombian Hija, and Front Street Big Belly Button. These coffee beans can still maintain a good flavor when brewed by hand, and are ice-cold and refreshing, suitable for drinking in the hot summer.
