Hand-brewed coffee is a process of flavor extraction + filtration at the same time. The extraction takes place centered on the position where the water is poured. The key lies in how to control and balance.
Front Street usually considers the grinding degree of coffee beans and the temperature of brewing water when adjusting the parameters of Pour over(V60) coffee. However, the ratio of powder to water is also very important. The amount of water during brewing affects the final flavor of the cup of coffee. Today, Front Street uses the well-known Geisha coffee beans to make a comparison. What should be the pink to water ratio to show the characteristics of Geisha coffee?

Our Pour over(V60) coffee beans today are Front Street Washed Flower Butterfly, which is a high-quality Panamanian product containing 70% Geisha. It is medium-light roasted to retain Geisha’s unique white floral aroma and honey sweetness, while also highlighting the caramel sweetness. It is suitable for hand brewing, French press, cold brew and other methods.Front Street has always insisted on delivering freshly roasted coffee beans within 5 days, so everyone can enjoy the longest period of appreciating the flowers and butterflies when they receive them.

If you like this style of taste, you can also buy Front Street Yirgacheffe dings (floral, citrus, tea flavor), Front Street Jade Manor Green Label Geisha (coffee flowers, honeydew melon, Tieguanyin tea), and Front Street Kenyan cherry tomatoes (cherry tomatoes, snow pear, Bolin).

To address the issue of the optimal powder-to-water ratio, today we will use Front Street Butterfly to brew 15g of coffee powder at four different powder-to-water ratios, namely 1:15, 1:16, 1:17 and 1:18, which correspond to 225ml, 240ml, 255ml and 270ml. The grinding degree, water temperature and brewing technique are basically the same.
Front Street uses brewing parameters: V60 filter cup, 15 grams of powder volume, 90°C water temperature, and grinding degree (Chinese standard No. 20 sieve pass rate 80%).
Front Street adopts a segmented extraction brewing method. The first time is to inject 30 grams of water (2 times the amount of powder) and steam for 30 seconds. The water is injected in a small water column from the center, and then slowly goes out. Although it is a small water column, please be careful not to deliberately slow down the circle speed, because once the circle speed is too slow, the water column will flow in one direction, so the powder layer will not be evenly fed.
In the second stage of water injection, a small water column is injected into the bottom of the powder layer. In order to allow the penetrating power of the water column to be concentrated, the range of the circle movement should be small, about the size of a one-yuan coin, and then circle out. At the beginning of the second water injection, pay attention to the amount of water and try not to exceed the height of the powder layer. The thicker powder layer on the edge of the filter paper will become heavier due to water draft, and will slip and become thinner as the water level drops. When the water level drops to half, the third water injection can be performed.

Starting from the third water injection, it is necessary to observe the extent of the water level drop. Also start from the center and feed water in a circle. The amount of water should not exceed the height of the powder layer. You can increase the amount of water appropriately to allow the depositedcoffeeThe particles all tumble, thereby dissolving out the soluble substances. When it reaches the set amount (for example, 1:15 powder-to-water ratio, 15 grams of powder, 225 grams of water), you can remove the filter cup.

Technique: Steam 30 grams of water for 30 seconds, inject water into sections of 125 grams. When the water level drops and is about to expose the powder bed, continue to inject water until the end of 225 grams. When the water level drops and is about to reveal the powder bed, remove the filter cup. (Start steaming and time) The extraction time is 2'00".

Blue Label Geisha flavor: lemon, grapefruit, plum, nectarine, green tea, floral, honey, with a thicker taste.

Blue Label Geisha flavor: ginger floral, brown sugar, lemon, citrus, cream, lotus mist. The flavor is clear, the aroma is obvious, but the aftertaste is short.
Flavor comparison
The powder to water ratio is [1:15], the concentration of the coffee is higher, and the flavor is concentrated. The extracted butterflies can feel some obvious flavors, with a heavier tea taste, and the taste is the most mellow among the four cups.
With a powder to water ratio of [1:16], the extracted butterflies can feel that the flavor is obviously richer than if the powder to water ratio is [1:15].
With a powder to water ratio of [1:17], the extracted coffee tastes better both in terms of flavor and sweetness, and the flavor levels are richer and clearer.
The pink to water ratio is [1:18]. Although the extracted Butterfly Coffee has a strong ginger flower aroma and a relatively clear flavor, it lacks some layers and aftertaste, making it taste lighter.

Front Street recommends that if you are brewing coffee with rich flavors such as Gesha, you might as well try to increase the powder-to-water ratio. Try using the two powder-to-water ratios [1:16] and [1:17] to highlight the rich layers of Geisha.
