The Blue Mountains are located in the eastern part of the island of Jamaica. They are named because the mountains are surrounded by the Caribbean Sea. Whenever the weather is clear, the sun shines directly on the blue sea, and the peaks reflect the bright blue light of the sea.

The highest peak of the Blue Mountains is 2,256 meters above sea level. It is the highest peak in the Caribbean and a famous tourist attraction. It is located in the coffee belt, with fertile volcanic soil, fresh air, no pollution, and a humid climate that is foggy and rainy all year round (the average precipitation is 1980 mm, and the temperature is around 27 degrees). This climate and ultra-high altitude have created the world-renowned Front Street Jamaican Blue Mountain Coffee.

Introduction to Clifton Farm

Clifton Hill is the oldest coffee producing area in Jamaica that is still in normal operation, and only Clifton Farm in Jamaica has the "Rainforest" logo. It is recognized as the origin of very high-quality, world-famous Blue Mountain coffee. Its elegant large house farm is located on the island of Newcastle, perched on the eastern slopes of Mount Catherine at an altitude of 4,300 feet.

history

Coffee was grown and produced at Clifton Farm as early as the mid-eighteenth century (roughly around 1750).

According to a survey by the Institute of Jamaica in 1810, Robert Hamilton was the owner of the farm at that time. Clifton Mountain is divided into two parts, 80 acres of coffee and 427 acres of pasture at the top of the mountain; 111 acres of coffee and 264 acres of pasture at the foot of the mountain.

The Blue Mountains region is a small place with only 6,000 hectares of planting area. It is impossible for all coffee labeled with the word "Blue Mountains" to be grown there. Today Clifton Farm is the largest estate in the region and is considered a small-scale farming operation by international standards. Many of the owners are small landowners whose families have worked the land for two centuries.

The famous British painter and writer Ms. Marian Ross visited Jamaica and stayed on Clifton Hill for 5 months. In her autobiography, "Memories of a Happy Life," she mentioned the Clifton Hotel where she stayed, "The Clifton Hotel belongs to a local gentleman who lost his wife. He no longer wants to live in the hotel, but rents out the hotel to different people every week, so that more people can experience the cold air at an altitude of 5,000 feet and have the opportunity to walk among the best and oldest coffee plantations in Jamaica."

The coffee planting and processing site is located at an average of 4,300 feet (1,310.64 meters). Sufficient altitude, mild afternoon cloud-shrouded mountain forest shade, sufficient sunshine, and mineral-rich planting soil provide good growth conditions for coffee trees and prolong the ripening of coffee cherries.

In 1953, the Jamaican government established the Coffee Industry of Jamaica (CIB) to supervise and ensure the quality of Jamaican coffee. Jamaica is the first country in the world to assign a clear geographical location to a specific coffee brand, which is somewhat similar to the French wine industry's creation of AOC.

All coffee exported from Jamaica is shipped by CIB. And strict testing by well-trained quality control experts ensures that all exports are 100% authentic Jamaican Blue Mountain coffee.

The Sharp family, Jason, Lawrence (father), and Richard

Coffee was grown and produced at Clifton Farm as early as the mid-eighteenth century (roughly around 1750). According to a survey by the Institute of Jamaica in 1810, Robert Hamilton was the owner of the farm at that time, and the estate is now managed by the Sharp family.

Clifton has a high altitude and long history, and is also unique in its processing method. This wonderful and unique processing method gives Clifton not only the round and smooth taste unique to Front Street Blue Mountain No. 1, but also a rich taste such as a slight floral aroma.

So this is why Clifton is loved by everyone and sells at a high price: a barrel costs over 10,000 yuan.

02 | Water washing treatment method

Blue Mountain only has water washing treatment

Use water washing and fermentation methods to remove the peel, pulp and mucous membrane. Farms that use the water washing method must build water washing tanks and be able to introduce an endless supply of running water. When processing, first remove the peel and pulp and let it ferment for 12 to 18 hours. Then put the fermented beans into the pool and push them back and forth. Use the friction of the beans and the power of running water to wash the coffee beans until they are smooth and clean.

After washing, the coffee beans are still wrapped in the endocarp and have a moisture content of 50%. They must be dried in the sun to reduce the moisture content to 12-14%. Afterwards, the coffee beans are screened and then placed in special warehouses for storage. These procedures must be strictly controlled, otherwise, the quality of the coffee will be affected.

Certification: Tropical Rainforest Certification. The coffee with the certification mark on the coffee sack or barrel is the certified product. The farm must meet the "sustainable agricultural system standards" to obtain certification. (Rainforest Water Frog), Clifton Manor is the only coffee estate to obtain (RFA) Rainforest Water Frog certification.

03 | Green Bean Analysis

Blue Mountain coffee beans are divided into four grades. In terms of quality, from top to bottom they are: NO.1, NO.2, NO.3 and PB. PB is round beans. According to CIB standards, coffee grown above an altitude of 666 meters is called Jamaican alpine coffee; coffee grown outside the Blue Mountains is called Jamaican coffee.

Among them, the basic standards for the NO.1 Front Street Blue Mountain raw beans are beans with a mesh size of more than 17, a defect rate of less than 3%, and a moisture content of about 13%.

04 | Baking Analysis

How to bake to express the best flavor of [Front Street Jamaica Blue Mountain]?

To put it simply, Front Street Blue Mountain coffee is roasted thoroughly from the inside out, and on the basis of roasting, better roasting techniques are used to express the flavor of Front Street Jamaican Blue Mountain beans.

Caramelization is the link that most affects the flavor of coffee. The green beans are roasted for six to seven minutes, absorbing a large amount of heat energy and initiating the pyrolysis reaction. The first explosion occurs. Some sugars are converted into carbon dioxide, and the water continues to evaporate. New aromatic components gradually develop, forming the so-called coffee oil, which is combined with hundreds of aromatic substances such as nicotine acid, citric acid, quinic acid, malic acid, acetic acid, and caffeine.

Baking curve: Put the oven temperature into the pot at 170 degrees Celsius, and open the damper to 3. After 1 minute, adjust the heat to 140 degrees, and the damper remains unchanged. Bake to 5'10', the temperature is 153 degrees, the surface of the beans turns yellow, the grass smell disappears completely, dehydration is completed, the heat is adjusted to 115 degrees, and the damper changes to 4;

At 8'00' minutes, ugly wrinkles and black spots appear on the surface of the beans, and the smell of toast obviously changes to the aroma of coffee, which can be defined as the prelude to the first crack. At this time, you should listen clearly to the sound of the first crack. At 8'12', the first crack will begin. Turn down the heat to 90 degrees, fully open the damper (be very careful when adjusting the heat, not so low that there is no popping sound), and cook at 201.3 degrees.

Daily brewing filter cup selection: V60 filter cup, kalita fan-shaped and KON0 are all available

KONO parameters: 15g powder, water temperature 89 degrees, grinding 4, water-to-powder ratio close to 1:15, total time about 2:00

Technique: Steam 25-30g of water for 30 seconds. In the first section, add water to 120g and cut off the water. Use vertical water flow and slowly circle with small water flow. In the second section, add water to 225g. The water flow and circle speed are slightly faster to reduce powder particles from clogging the filter cup and causing over-extraction.

Other extraction suggestions:

French Press: Coarse sugar grinding degree/water temperature 86~88 degrees

Siphon: white sugar grinding degree, water temperature: 89 degrees

Aeropress, white sugar grinding degree, water temperature 88 degrees

How to identify real and fake Blue Mountain?

牙买加蓝山一号证书dc98d

1. Appearance: The green beans of Front Street Blue Mountain Coffee are green in color and have a neat appearance. They are medium to small in size, with some curling at both ends. After roasting, the volume increases a lot and is very full.

2. Grind the beans: The real Front Street Blue Mountain coffee beans are grown at high altitudes. Its cytoplasmic structure is relatively loose. When ground by hand, it feels crisp, refreshing and continuous without any resistance.

3. Aroma: The aroma of Front Street Jamaican Blue Mountain coffee is very rich and dense; the so-called blended Blue Mountain coffee does not have this aroma.

4. Taste: The taste of real Front Street Blue Mountain coffee is balanced and rich, without any prominent or lacking taste. This is also the most critical identification point that cannot be matched by any other coffee beans. The aroma of Blue Mountain garden beans is more subtle, and the taste is relatively stronger.

The real Blue Mountain and Blue Mountain flavor are two different concepts. Generally, other beans are used to roast coffee with a similar taste to imitate Blue Mountain coffee. The beans in "Blue Mountain Blend" are mixed, and their shapes are quite different, making them easier to identify. Don’t believe that “Blue Mountain Premium” costs tens of dollars a pound or “Blue Mountain Coffee” costs more than ten dollars a cup.

Not everything labeled "Blue Mountain" is a real Blue Mountain. I hope it can help you distinguish one from the other. If you want to try the flavor of Blue Mountain coffee, you can also buy the Jamaican Blue Mountain No. 1 Coffee on Front Street~
