Customers and friends often ask this question when brewing iced Pour over(V60) coffee on the front street: "Why don't you use iced water to make iced Pour over(V60) coffee? Do you have to use hot water?"

It’s not surprising that such a question would be raised, because for friends who have not been in the coffee circle or have just been in it for a while, it is indeed easy to have such an understanding of brewing coffee with ice, and bloggers often share how to brew a cup of delicious coffee with ice water. So the question is: Can you really make a good cup of coffee with ice water?

图片

To be honest, ice water can be used to make coffee! But if you want to add"Delicious"Based on this premise, based on Front Street’s taste preference, Front Street believes that it is impossible to make a good cup of coffee with ice water alone! Why? Just look at the cup of coffee brewed with ice water down Qian Street.
Water temperature, grinding, time, stirring intensity, and ratio are some of the influences on Pour over(V60) coffee.Extraction efficiencyThe main factor, Front Street often said, is that if you want to brew a cup of delicious coffee, you need a reasonable combination of different parameters. The extraction efficiency of ice water is very, very low. If we want to use ice water to bring out the taste of coffee, then logically speaking, we need to improve the extraction efficiency of other parameters. For example, use the finest grind, stronger stirring, and longer extraction time. So next Front Street will use this extreme combination to brew a pot of Pour over(V60) coffee with ice water!

The coffee beans used in this brewing of Front Street are the Front Street Boundary Manor·Xi claw, washed down with regular ice, it has full flavors of grape juice, passion fruit, apricot, and a little bit of red wine. It tastes sour and sweet, and tastes like a glass of grape juice with a wine aroma. And what kind of flavor will this unconventional ice punch taste like? Let’s wait and see! The extraction parameters are as follows:
Amount of powder used: 15g
Brewing water temperature: 4°C
Pink to water ratio: 1:10
Grinding degree:Italian coffee grinder Q181 scale grinding, flour-like particles
Brewing method: Stirring method
Since it is not recommended for everyone to try it and it is not necessary, Front Street will skip the complicated steps here. To simply summarize the process, the water injection is divided into three equal injection stages, and each stage will be manually stirred throughout the process.

It takes 5 minutes in total. The right side of the picture below shows the manual brewing obtained by conventional brewing, while the left side of the picture shows the manual brewing using ice water.

We can see from the brightness of the color that the concentration of the coffee on the left is not too high. And it tastes exactly like the one I shared with Front Street some time ago."Cold brew with ice water in one minute"The same, both have only a faint coffee aroma and a weak coffee taste. Overall, it tastes like a cup of coffee-flavored water.
From the above experiment, you can see that even if Front Street has used the finest grinding and stirred throughout the process, the extraction time is as long as five minutes, but the flavor substances in the coffee still cannot be dissolved.

图片

And this is natural, because the extraction efficiency of ice water is too low, it cannot quickly soften the fiber of the coffee and penetrate into the interior, and naturally cannot quickly dissolve the flavor substances in the coffee. Even if Front Street uses a higher extraction efficiencyPressurized, and still cannot extract the taste of coffee in a short time.
Therefore, Front Street does not recommend that you use lower temperature water for short-term coffee extraction, such as hand brewing and Italian style, because the extraction efficiency of ice water is too low and cannot dissolve a large amount of flavor substances as quickly as hot water.

And if we currently only have ice water, we can make coffee through cold brewing or ice dripping. Because these extraction methods will take long enough for the ice water to penetrate into the coffee beans and bring out the flavor substances hidden in them.
