Front Street is a loyal fan of Mandheling coffee, and Mandheling coffee is a best-seller among the ration beans of FrontStreet Coffee. However, I just started to contactMandhelingWhen drinking coffee, you may be intimidated by the herbal and mellow taste. The first thought is: How can it be so bitter? Maybe we are not used to drinking it. However, Front Street has discovered a problem: most of the friends who like to drink Mandheling coffee are men. In particular, the golden Mandheling coffee is very popular, while women prefer the fresh and bright taste of Ethiopia.
Mandheling is an Asian bean, the taste is naturally relatively mellow and has the flavor of Chinese herbal medicine, and it is the representative of Indonesian coffee. Mandheling coffee is produced in Sumatra, Indonesia. Due to the naturally pollution-free land and special varieties,MandhelingThe coffee is full of round and rich texture, and when paired with milk, it is the best in the world. It has a rich texture, thick taste, good consistency, a round taste like syrup, and very low acidity. It has always been one of the most popular single-origin coffees in Asia. After dark roasting, it has a rich wood smell and cheese-like aroma, with prominent bitterness and mild sourness, and the aftertaste is like the strong astringency of Bordeaux red wine.

The flavor of Mandheling coffee is like this, but what about golden Mandheling coffee?Golden MandhelingCoffee is the finest among Indonesian specialty coffees, and is slightly better than Mandheling coffee in terms of quality and taste. The price is naturally relatively high.
So how to distinguish Golden Mandheling coffee? And how to identify it?
Golden MandhelingProduced in the Lintong (Lintong) region in northern Sumatra, Indonesia, the harvesting operation is limited to picking fully ripe fruits from single fruits by hand to ensure the quality of the initial bean selection. The coffee cherries are processed using the SEMI-WASHED semi-washing method, and are naturally sun-dried. After shelling, they undergo another drying and refining process, two times of green bean cleaning, and four times of Hand-Pick manual selection.

PWN Company follows extremely strict standards when producing golden Mandheling coffee beans. Under the G1 standard, the highest grade of Indonesian coffee, plus three times of manual hand selection, it ensures the quality and greatly reduces the defect rate. The PWN Golden Mandheling selected in this way finally showed a uniform color and uniform bean shape. Not only did it not have the unique earthy smell of ordinary Mandheling, the taste was clean and translucent, and the sweetness was more intense.
The quality of PWN Gold Mandheling is also reflected in its price. In order to make their productsMandheling coffee beansCan be sold at a good price, marked "Golden Mandheling"It is sold without indicating whether it is from PWN Company. In order to be very similar in appearance to PWN Golden Mandheling, some merchants will select G1 grade coffee beans with more than 18 mesh from ordinary Mandheling coffee beans; finally, three times of manual hand selection are added in order to be as close as possible to PWN Golden Mandheling in appearance. Even though the appearance can be as close as possible, the taste of PWN Golden Mandheling is difficult to imitate.

Baristas from FrontStreet Coffee have conducted blind tests on a variety of Golden Mandheling coffee beans, and the baristas can accurately identify PWN's Golden Mandheling. This is because, PWN’sGolden MandhelingThe clean taste is unmatched by other Golden Mandhelings.

The full name of PWN is Pawani. It is a well-known green bean purchasing company in Indonesia. It mainly targets Mandheling coffee tree species. It has completely purchased all high-quality coffee producing areas in Indonesia. High-quality Mandheling coffee comes from Pawani. The company was founded in 1957 and initially engaged in the rubber business. Because of its frequent business dealings with Japanese merchants, the Japanese company asked them to find their favorite Mandheling, so they went to GAYO, Aceh Province to collect good sources of Arabica raw beans. After many attempts to send samples, they finally found the Mandheling that met the requirements.
In other words, only PWN's Golden Mandheling is the real Golden Mandheling.
Golden Mandheling CoffeeVariety
Indonesia has a very long history of growing coffee beans. In the past, Arabica was grown. Due to leaf embroidery disease, 90% of the coffee beans exported from Indonesia are Robusta coffee beans, and only 10% are Arabica coffee beans. FrontStreet Coffee's new season golden mandheling is produced in GAYO Mountain in Aceh, North Sumatra. The variety is Ateng, which is a cross between Arabica and Robusta and is widely grown in Sumatra and other small Indonesian islands. Ateng is actually the local name for Catimor coffee.

Mount Acehgayo is at the northernmost tip of Sumatra. The coffee cultivation in Mount Gayoo is mainly around the town of Takegon and the hillside land next to Lake Tawa. The average height in the production area is between 1100 and 1600 meters. The quality of its coffee has always been excellent. However, due to the previous political instability, the coffee in this area was difficult to export. In recent years, the situation has been peaceful, and coffee planting in Aceh has also been developed, and the quality is better than that in Lindong.
Golden Mandheling coffee processing method:
Front Street believes that the flavor of any coffee is inseparable from its processing method, which can be said to directly affect the flavor of coffee. Indonesia has a sultry climate all year round and a lack of water. In order to better separate and dry coffee beans while saving water, Indonesian coffee farmers developed a method to better dry coffee beans - the wet planing method, also known as the wet hulling method. This is also the standard processing method for Mandheling coffee beans.

The wet planing process is characterized by staged, rapid drying and removal of parchment paper for drying. Teacher Han Huaizong described this as a rare processing method in the world. Mandheling's special low-acid, thick and stuffy flavor was created by accident. Golden Mandheling coffee uses the common local wet planing method.

Why are most Mandhelings roasted medium to dark?
Front Street noticed that in the past, Mandheling coffee on the market was all medium-dark roasted and had a classic, rich black coffee flavor. With the development of specialty coffee culture in recent years, everyone has begun to pursue a more unique coffee taste. Many businesses will launch medium roasted or even medium light roasted Mandheling coffee. The lighter the roasting degree, the more acidity the coffee beans retain. The flavor is mainly fruits, herbs, and tea, and the body is lower. A customer once asked Front Street: Since the medium-light roasted Mandheling is so refreshing, why not roast it lighter?
I believe friends who often drink Mandheling should know the wet planing method in Sumatra. The wet planing is poured into the shelling machine before the final drying step. Large friction is used to tear off the semi-dry parchment layer that is close to the green beans. After the friction and stirring, the green beans are easily crushed or squeezed. The "naked beans" without the parchment skin dries very quickly. At the same time, they are directly exposed to a moist environment and are susceptible to the growth of various bacterial species.

Although wet planing does create a unique herbal and woody aroma for Mandhelingui, it also results in a higher defect rate in the green beans. Dark roasting can perfectly cover up this defect. In addition, Mandheling’s fame stems from the early discovery of the Japanese. Based on their taste preferences, there is nothing better than Japanese-style dark roasting. This is why most Mandhelings are roasted so darkly. Front Street hopes that everyone will drink the classic Mandheling flavor, so the two Mandhelings sold daily on Front Street are medium-dark roasted, including Mandheling ration beans from the Lindong production area and PWN gold Mandheling coffee from the Aceh production area.

So how to hand-brew this golden Mandheling coffee beans?
Coffee beans are divided into light roasting and dark roasting, and the techniques are also different. Golden Mandheling coffee beans are dark roasted beans, so the water temperature should not be too high. Use a Kono cup. The water temperature is low because we don’t want to extract too much impurities. Because dark roasted coffee itself has too many aromatic substances that will be released the moment water is poured into it, if you continue to use lightly roasted water for extraction, it will lead to over-extraction, and the coffee will most likely taste sour, bitter, and astringent. Therefore, Front Street will lower the water temperature a little. The brewing water temperature for light roasted coffee is 91~93℃, and Front Street recommends 87~88℃ for medium and dark roasted coffee beans.
The reason why FrontStreet Coffee chose the Kono filter cup is because the flow rate of the V60 filter cup is too fast and under low water temperature conditions, it is easy to under-extract. The Kono filter cup has few ribs and is located at the low end. The filter paper is close to the filter cup, which can limit the air flow, increase the contact time between water and coffee powder, allow the coffee powder to be fully extracted, and enhance the mellow taste.

Front Street Brewing Golden Mandheling Coffee Parameters:
Water temperature: 88°C, powder amount: 15 grams, powder to water ratio: 1:15, grinding degree: medium to fine grinding (pass rate of No. 20 sieve 70%).

Using segmented extraction, use 2 times the amount of coffee powder for steaming, that is, 30 grams of water is steamed for 30 seconds. The reason why the steaming process is required is to allow the coffee powder to discharge the internal carbon dioxide gas, thereby making the subsequent extraction more stable. Use a small flow of water in a circle to inject water in stages until 125 grams is reached. Continue to inject water until 225 grams and stop. When the water in the filter cup has finished dripping, remove the filter cup. Start timing from the water injection. The extraction time is 2'00'. Next, pick up the entire cup of coffee, shake it evenly, and then pour it into the cup to taste.
