Friends who often drink coffee know that the acidity and bitterness of coffee are related to the degree of roasting. Recently, some friends asked Front Street to recommend any delicious dark roasted coffee beans. Front Street asked everyone to first understand what the degree of roasting is, and then see how to choose the coffee that suits you.

What is roast level?

According to FrontStreet Coffee, coffee roasting degree is divided into American terms light roasting, medium roasting, and dark roasting, which can be subdivided into 8 stages. The difference in roasting degree has different opinions in different regions. The following is a brief introduction to the roasting degree and flavor of coffee:

1. Light Roast: Very light roast, also known as "light roast"

Bean dropping time: around the beginning of first crack

Flavor: The beans are light cinnamon in color and have a strong grassy flavor. The taste and aroma are insufficient. They are generally used for testing and are rarely used for tasting.

3. Medium Roast: Medium roast, also known as "micro-medium roast"
Bean dropping time: from the first burst to the end
Flavor: The surface of the beans is chestnut color, the taste is light, sour and bitter, and the aroma is moderate. It retains the original flavor of the coffee beans and is often used as American coffee or mixed coffee.

4. High Roast: Medium and slightly dark roast, also known as "dark roast"
Bean dropping time: the first burst is over
Flavor: The surface of the beans is light reddish brown, with a refreshing and rich taste, a balanced sourness and bitterness without irritation, and a slight sweetness, with good aroma and flavor. Blue Mountain and Gili Mazaro coffee are suitable for this roasting level and are loved by people in Japan and Central and Northern Europe.

Dark roasted coffee beans recommended

1. Front Street Golden Mandheling Coffee Beans

Front Street Indonesia’s Mandheling is aTypical dark roasted coffee beans,Its basic flavor is spices and herbs, with a mellow and smooth taste. Therefore, dark roasting will better highlight the basic flavor of coffee beans. If light roasting is used, its original flavor will be weakened, and the original soul of the Indonesian Mandheling flavor will be lost. Front Street Golden Mandheling is based on Mandheling and has gone through three machine screenings and hand selections to remove all defective beans, which greatly improves the quality of Mandheling coffee and makes the coffee taste cleaner and have a more pronounced aftertaste.

2. Front Street Colombian Cymbidium Coffee Beans

The Huila production area is located in the southern part of Colombia's Central Mountains, close to the Cymbidium volcano, and has volcanic soil rich in minerals. Surrounded by a variety of high-altitude mountains and hills, the climate of the canyon slopes not only prevents cold winds from blowing in, but also allows the mountain breeze to cool down without high temperatures. The Columbia River flows here, providing sufficient water resources and water vapor. The annual rainfall can reach 2000~3000mm. The superior geographical and climatic conditions make it a representative production area of high-quality coffee beans worldwide. Front Street Colombian Cymbidium Coffee uses a common water-washing process in the Americas, which gives the coffee beans a clean flavor profile. In order to present the classic Colombian flavor, Front Street uses medium-dark roasting, and after grinding and extraction, it has rich creamy chocolate, caramel, cookie, and cocoa flavors.

3. Front Street Brazilian Queen Manor Coffee Bean

Queen's Manor is located in the Morgiana production area in the state of Sao Paulo, Brazil. It is different from many large-scale production areas in Brazil that rely on quantity. The terrain here is higher, forming a relatively unique micro-climate. In addition, the manor manually picks coffee fruits with suitable maturity. Each batch is processed with a small amount of exquisite techniques, and the quality of the coffee beans produced are mostly high-quality. The variety of Front Street Queen Manor coffee beans is the rare local yellow bourbon. Since yellow bourbon coffee beans at high altitudes are denser and have higher glucose content, Front Street’s roasting idea is to highlight the classic mellow aroma of Brazilian coffee while showing off the sweetness of bourbon itself, so medium-dark roasting is used.

How much caffeine is in coffee beans?

Coffee is a drink made from brewed coffee beans. If you don’t know the caffeine content of coffee beans, how can you know the caffeine content in coffee~ (It’s a mouthful, but it’s true~)

Different varieties have different caffeine contents. Currently, coffee varieties with commercial value are mainly divided into two categories: Arabica and Robusta. The caffeine content of Arabica is about 0.9-1.4% (average 1.3%), while Robusta has twice the "dose", around 2%-4%, with an average of 3%.

图片

These fluctuations in caffeine content are due to changes in coffee beans grown in different environments in different production areas. Moreover, a variety with extremely low caffeine content has also been created! Their caffeine content is about half lower than that of regular Arabica, so people call it "decaf coffee." ‍

So how much caffeine does a cup of coffee contain?
Most of my friends must already know how to calculate~ That’s right! Just take how many grams of coffee beans are used in a cup of coffee, and then multiply it by the average caffeine content of the variety to calculate its peak value. For example, if 15g of coffee powder is used to extract a cup of Pour over(V60) coffee, its peak value is calculated as 15g × 1.3% (average Arabica species). The final result is: the peak caffeine content of this cup of Pour over(V60) coffee is around 195mg.

图片

But know that this is its peak value, not the actual caffeine content. What does it mean? This cup of coffee needs to extract all the caffeine from the coffee beans to have 195mg of caffeine! The actual caffeine content it contains will be much smaller than this value!

The reason why Front Street says this is because caffeine is a "soluble substance." There are 30% soluble substances in a coffee bean, but we don’t need to extract all of this 30%. We usually only extract 18%~22%! Because if all 30% of the soluble substances are extracted, the entire cup of coffee will be miserable.

Caffeine is a bitter substance. Front Street has shared before that although bitter substances are released throughout the extraction process, the rate is relatively slow, much slower than sour and sweet substances. The more efficiently a cup of coffee is extracted, the more caffeine it will contain. Therefore, according to normal extraction efficiency calculations, the caffeine content of a cup of Pour over(V60) coffee extracted with 15g of powder should actually be around 60~90mg!

图片

Then, we apply the above conclusion to other brewing methods, and we can calculate their respective caffeine contents based on their extraction time and efficiency:

The caffeine content of a cup of cold brew coffee (200ml/20g beans/12 hours) is about 200mg;
The caffeine content of a cup of French press coffee (225ml/15g beans/5 minutes) is approximately 120mg;
The caffeine content of a cup of Pour over(V60) coffee (225ml/15g beans/2 minutes) is about 60-90mg;
One serving of espresso (30ml/15g beans/30 seconds) has approximately 85mg of caffeine.
‍
Note: Latte, cappuccino, dirty, Americano, etc. are all espresso based on espresso, so without cutting out the espresso, their caffeine content is equivalent to that of espresso! ‍‍‍‍‍‍‍‍‍

How many cups of coffee can you drink in a day?‍‍

This is a hot topic recently! According to surveys, an adult’s daily caffeine intake should not exceed 400mg, which means that as long as the intake is lower than this value, there will be no problem! Let’s take the average caffeine content of a cup of Pour over(V60) coffee as an example: 80mg. As long as the Pour over(V60) intake is controlled within 5 cups a day, there will be no problem.
