From the perspective of coffee flavor, pre-ground coffee beans will speed up the loss of coffee flavor. This is why most cafes, including Front Street, recommend freshly ground coffee.
For domestic consumers who mainly consume Pour over(V60) single-origin coffee, their requirements for flavor are more stringent, and their consumption of coffee is relatively small. It is very easy for the flavor of the coffee powder to be lost and not finished. Therefore, although most cafes offer grinding services, customers are still advised to go back and grind the food themselves.

It seems that pre-ground coffee powder has a completely negative impact on the flavor! There is another situation where grinding for you is better than grinding it yourself, and that is when the performance of your own grinder is not very good. Everyone knows how important grinding is to flavor. It is important to master a suitable grinding degree, and the uniformity of grinding is even more important. Most cases of bitterness are caused by too much fine powder.

There are two advantages of coffee shop grinding. One is that the grinding degree can be more accurately controlled. The other is that the grinder has better performance (this depends on the specific grinder) and the coffee ground is highly uniform. When it comes to freshness and grinding degree, Front Street believes that the grinding degree should be chosen first. After all, no matter how fresh the beans are, they will taste unpalatable if the grinding degree is not correct. It is better to drink them more diligently. But if you really pursue the flavor of coffee, it is best to equip yourself with a high-performance grinder for fresh grinding and brewing.
If you brew pre-ground coffee by hand, the coffee will not expand. This is normal. Because when coffee is ground into powder, up to 70% of the other ingredients in the coffee can be lost. The remaining gas will also drain away faster than the coffee beans. Therefore, when water is injected, there is not much gas in the coffee powder, so it cannot expand.

How to store ground coffee powder? Front Street here provides you with some reference plans.
Store in a cool, ventilated and dry place: Whether it is coffee beans or coffee powder, they need to be placed in a place away from direct sunlight, because high temperatures will speed up the release of coffee flavor, which will greatly reduce the appreciation period of coffee. At the same time, we need to pay attention to whether the storage location is humid. A humid environment will easily breed bacteria. Not only will the coffee smell moldy, but it will also affect human health.

Completely sealed storage: Coffee beans can be stored in the original packaging and sealed (if there is a one-way exhaust valve that needs to be blocked), but coffee powder should be stored in a completely sealed container as much as possible. And try to reduce the number of times you open it, because every time you open it, the outside air will "invade" the coffee powder.
How to brew coffee from ground coffee?
After we buy coffee powder, it is best to drink it as soon as possible before the aroma dissipates. Below we use Front Street Lanshan No. 1 coffee powder as a demonstration:

Front Street’s brewing parameters: Front Street Blue Mountain No. 1 coffee beans, KONO filter cup, 88°C water temperature, and Front Street’s usual three-stage water injection. Coffee powder: 15 grams Pink to water ratio: 1:15.

Three-stage water injection: Use 30g of water to evenly moisten the coffee powder layer and steam it for 30 seconds. In the second stage, use 95g of water to inject in a circle from the inside to the outside at a constant speed until the water level drops to 2/3 of the powder layer in the filter cup. Then start injecting the third stage of 100g. Pay attention to the small water flow throughout the process. Remove the filter cup after the drip filtering is completed in about 2 minutes. Finally, shake the coffee liquid gently and start tasting.
