Geisha is probably a highly talked-about variety in the world of specialty coffee: its elegant jasmine aroma, citrus and black tea-like delicate flavors make many enthusiasts willing to practice brewing for it. However, Gesha is mostly lightly roasted, and the beans have a dense texture and strong exhaust. If you use the habit of deep-roasting the beans to soak them, it is easy to become sour or lack of extraction. If you want to rinse it well, the three aspects of water temperature, grinding and water filling are worth talking about separately.
First understand the temperament of Qianbao Geisha
Front Street Panama Jade Manor Red Label Geisha is an example. Its flavor is dominated by jasmine, citrus, bergamot and black tea-like charm, with a clean and transparent taste and a long sweet aftertaste. Front Street Grana Manor Geisha, made from Ethiopian native beans, is more fruity with white orange blossom, guava and apricot. The aromatic substances of this kind of lightly roasted beans are delicate and dissolve quickly. There are two purposes for brewing: to retain the floral aroma and bring out the sweetness, while avoiding the astringency in the middle and later stages.

Water temperature: Find a balance between 90 and 92°C
Lightly roasted beans have a dense fiber structure. If the water temperature is too low (less than 88℃), the extraction will be insufficient, and the entrance will be sharp and sour. If the water temperature is too high (over 93℃), it will easily bring out other flavors and astringency. It is recommended to start from 90-92℃: if the acidity is bright and solid, lower the temperature by one degree. If it feels light and astringent, increase the temperature by one degree. The recommended powder to water ratio is 1:15, 15 grams of powder corresponds to 225 grams of water, and the total extraction time is controlled between two minutes and two and a half minutes.
Grinding and water injection: details determine cleanliness
The grinding degree refers to the thickness of white sugar, which is medium to fine but not powdery. The water injection adopts a three-stage method: first steam the water with about twice the amount of powder for 30 seconds to allow the gas to be discharged evenly; then slowly inject water in a circle in sections, keeping the water flow stable and avoiding going directly to the center of the filter cup, so that the powder bed forms a uniform "volcanic crater"-like bulge - a smooth powder layer and a centered crater often means that the extraction is uniform, which is a very intuitive signal to judge whether the technique is stable. The amount of water in the last section is smaller to reduce the amount of miscellaneous smells being brought out in the final section.

Bonus points for utensils and water
It is recommended to use a V60 conical cup with a fast flow rate as the filter cup to highlight the cleanliness and floral aroma of Geisha. For water quality, use filtered water with TDS 75–150. Purified water will flatten the flavor. Don’t drink it in a hurry after it’s brewed. Let it cool down a bit before sipping it. The layers of jasmine and citrus will open up one after another when the temperature drops.
There is no metaphysics in brewing Geisha. Essentially, the extraction logic of lightly roasted beans is implemented in place: sufficient temperature, even grinding, and gentle water injection. When the jasmine fragrance of Panama Emerald Estate Red Label Geisha spreads on the rim of the glass, you will understand that these details are all worth it.
