Since cold brew coffee is soaked in cold water to extract the coffee liquid, the exhaust effect of the coffee powder itself is very poor. Therefore, it is recommended to use some coffee beans with a relatively long roasting date (after the bean-growing period). Generally, it is best to make cold brew coffee 15-20 days after the coffee beans are roasted.
Below Front Street recommends several different flavors of coffee beans for you to choose from:

What is cold brew coffee?
Cold brew coffee is Cold Brew Coffee. Use professional production equipment to add ground coffee powder to cold water in proportion and put it in the refrigerator to refrigerate for 12 hours (if you want to obtain a higher mellowness, you can extend the refrigeration time to 24 to 48 hours); then filter the coffee grounds, and the resulting coffee liquid is cold brew coffee.
This coffee, which sounds quite labor-intensive, is actually much simpler to make than you think.

Maybe you can understand it this way: soak the coffee powder in cold water, put it in the refrigerator to soak overnight, filter out the coffee grounds, and you're done. To use a more poetic word, what you drink is not just a cup of coffee, but also a long wait.
The origins of cold brew coffee
Many people know cold brew coffee because of Starbucks, but cold brew coffee was not the first one by Starbucks. But it is true that Starbucks promoted cold brew coffee so that more people know and like cold brew coffee.
The earliest cold brew coffee is said to have been invented by the Dutch. In the 1600s, because hot coffee could not be drunk at sea, sailors could only soak coffee powder in cold water and found that it tasted pretty good. Cold brew coffee was very popular in Western countries, especially by the mid-19th century. Cold brew coffee spread throughout the world, from Britain to Japan to the United States. Various cold brew espresso coffees emerged in endlessly, especially in the military.

In the 1960s, Todd Simpson traveled to Peru, tasted Peruvian cold brew coffee and became obsessed with it. Soon after he designed and released what is now the world-famous Toddy Cold Brewing System. Starbucks uses the Toddy cold drink system and introduces cold brew coffee to the world.
How to make Front Street Cold Brew Coffee
1. Based on 50 grams of coffee powder, the coffee powder grinding thickness is 80% using a No. 20 standard sieve;
2. Put the coffee powder into a glass bottle, add 400 ml of room temperature water and 200 grams of hard ice cubes (a total of 600 grams of ice-water mixture)
3. The ratio of powder to water is 1:12. Use a stir stick to stir the coffee powder and water evenly, then seal and store in the refrigerator.
4. Place it in the refrigerator for 12-24 hours, use filter paper to filter out the coffee grounds, put the resulting coffee liquid in a clean sealed bottle, and then let it rest for 8 hours before drinking.

However, it is worth noting that the longer the cold brew coffee is left, the more fermented it will be, so the flavor of the beans you drink will be different every day. Front Street recommends that it is best to drink it within 3 to 4 days.
Front Street Cold Brew Making Experience Sharing
Once the coffee beans are selected, you should pay attention to more details. We found 3 points to pay attention to:
Grinding degree
When making iced drip coffee and cold brew coffee, Front Street generally uses lightly roasted coffee beans. This is because low-temperature extraction is not easy to extract mellow flavor substances, so it is most suitable to use coffee beans with obvious sweetness and sourness. In addition, the grinding size used for ice-drip coffee and cold brew coffee is the same as that used for Pour over(V60) light roasted coffee beans.
The grinding degree of Front Street light roasted coffee beans generally uses a No. 20 standard sieve with a sieving rate of 80%, that is, 8g of coffee powder can be obtained after 10g of coffee powder is sieved. Coffee powder of this thickness is about the same size as fine sugar. The grinder used on Front Street is an EK43S with a 9.5 scale.

Extraction time
Front Street found that cold brew coffee produced around 18 hours has the best quality, and should not be brewed for more than 24 hours. If it is exceeded, undesirable bitterness and astringency will appear. Cold brew coffee also has a peak, and longer is not always better.
water
Use ice water close to 0℃ and place it in a refrigerator at 0-5℃. To make your coffee taste better and more consistent, try to use filtered purified water, or buy bottled drinking water directly.

Low temperature and long extraction time are two major characteristics of cold brew coffee
Temperature will affect the decomposition rate of oil, acid and sugar in coffee. Low-temperature extraction can reduce the volatilization of the flavor in coffee under low temperature conditions, and store the coffee aroma and sweet and sour flavor molecules in the coffee liquid. When you drink it in your mouth, the temperature of the coffee liquid rises, and the aroma contained in the coffee liquid suddenly explodes. The advantage of low-temperature extraction is that it is not easy to extract mellow flavor substances and it is not easy to over-extract. The disadvantage is that the extraction time is long, often requiring more than 6 hours of extraction time.
The difference between cold brew coffee and hot brew coffee is that hot brew coffee extracts coffee beans through hot water, the temperature is between 82-95°C, generally no more than 5 minutes. The fastest espresso is 18-30 seconds, while cold brew coffee takes much longer than hot brew coffee. Compared with hot brewed coffee, cold brewed coffee has a significantly stronger flavor, less bitterness, and a smoother taste. Therefore it has been generally welcomed by everyone.
